Hi Denice, Let’s talk about principles and values – what matters to you most?
Authenticity, As a business we ensure and establish an authentic service from the moment you are greeted to your last bite. Being a family owned business we derive on being able to serve all of costumer with a familial environment that gives you that home cooked feeling without being at home while making sure we are fast , fresh, and authentic with every costumer or event that we get the opportunity to cater.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
La Campechana Mexican Food was establish on May 5th, 2012. Maria Blanco and Hector Lastra came together and blossomed the idea of opening their first business a food truck after selling burritos/variations of food platers in order to provide for their kids out of their van. As immigrants it felt like a dream to establish a business in the United States, but with being undocumented their was an un necessary unspoken amount of hurdles and limitation upon wanting to simply start a business. Their only fate being having patience, consistency, and an open mind to show up and not be scared of being rejected permission to make their vision come to life. Over the years La Campechana Mexican Food has undergone many obstacles but has overcome within areas such as rebranding, expanding, and establishing. Fast Forward to 2023: La Campechana has now expanded to 4 Catering Food Trucks located in Fort Collins and Laporte Colorado. We are a true testament of making the impossible possible when it comes to the limitations that this nation has crafted for undocumented individuals. We encourage people to not fear asking question and asking for help when it comes to creating your dreams.
