We had the good fortune of connecting with Bridget Bagel and we’ve shared our conversation below.

Hi Bridget, what’s the most important lesson your business/career has taught you?
The most important lesson our business has taught us is to listen to our audience and meet them where they’re at. For us, this meant making the transition to delivering our frozen meals and soups directly to homes along the front range. A lot of entrepreneurs get caught up in forcing their vision for their business onto their clientele instead of keeping their eyes and ears open to what folks are asking of them. When we originally launched, we saw ourselves strictly as a retail outpost. Once Covid hit, we were forced to explore delivering to homes, a revenue stream we originally had zero intention of trying out, and it has become the bread and butter of our business.

We have also started meeting our audience where they are at by adding two new in-store freezers to Molly’s Spirits, an innovative curator of regional and up-and-coming adult beverages, in both their Lakeside and Greenwood Village locations. We feel so fortunate to have this introduction to customers who we already know want to enjoy a unique variety of delicious offerings at home.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Our business Postcard Foods is our first baby and the product of our two very different personalities and work styles. I studied gastronomy and am much more focused on the culinary creativity that drives our menu while Jim’s background in strategic global marketing has prepared him to structure our businesses’ systems and basically be the all around glue holding this thing together. All of this to say, it absolutely has not been easy but we are so grateful to be in this together and can’t imagine owning a business without one another. As we grow our business and family (Baby Abraham is due in October!) we are excited to meet new folks and families to feed. We love being in Denver and meeting people who feel the same way about spending a bit more quality time outside and less time laboring over meals.

What we want the world to know about our brand is that we are a creative mom-and-pop business with a scalable model and scrappy approach to work that’s aimed at helping make families’ and individuals’ lives easier by delivering convenient, sustainable and flavorful meals.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
We both love living in a city with a wealth of green spaces. We usually take visitors to Denver Botanic Gardens, Cheesman and Wash Parks as well as the Cherry Creek bike path. Basically any opportunity to show friends from Philadelphia that our city is actually the always sunny one.

To eat, the meals we’ve enjoyed most are usually on South Federal. Suvipa Thai was a recent favorite with palpable heat. Samarkand on Parker Rd. is a must try Uzbek restaurant that serves delicate, dream worthy Manti dumplings.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Molly’s Spirits has been instrumental to our growth in recent months and we have so much respect and admiration for the positive culture there. As a store, they have done such a great job creating a shopping experience that is inviting and unpretentious. From store layouts to kind staff, Molly’s is just so natural to navigate. Their commitment to partnering with local alcohol producers is playful and innovative, and their system for home delivery is reliable and efficient. They’re hitting the mark on what the future of retail could be and we are optimistic to keep watching them pave the way.
