We had the good fortune of connecting with Jack Murdock and we’ve shared our conversation below.

Hi Jack, we’d love to hear more about how you thought about starting your own business?
My thought process behind starting CO Springs Eats was originally to just have an instagram page to share food in Colorado Springs with my close friends. However, over time it gained followers and then COVID-19 hit. I saw how many restaurants were struggling all over the country. I knew with my large following and my influence from being a member of Colorado College located in the heart of Colorado Springs that I could make a difference. I used different marketing techniques to grow my following even more. I then began to reach out to restaurants asking them for pictures of their food, drinks, and their delivery options during the pandemic. I began posting these pictures and slowly helped restaurants in Colorado Springs get more customers. Today, I am now starting marketing campaigns for multiple restaurants in the Colorado Springs area. I am specifically trying to bring in more Colorado College students into restaurants lacking a younger crowd in which they are seeking. I also am attending restaurant openings and visits to help promote menu items to the greater Colorado Springs community.

What should our readers know about your business?

I would not call CO Springs Eats a brand by any means but it has been exciting in the recent months seeing the difference one can make through social media. Watching restaurants gain more customers by simply posting pictures of their cuisine and advertising their deals is very exciting. I have learned many lessons along the way such as perseverance and staying committed. Many restaurants that I wished to help would not respond to messages for months. It was also difficult gaining followers at times as I learned how important it is to constantly be posting content to keep your followers engaged. What I am most excited about in the near future is bringing the Colorado College community closer with the downtown Colorado Springs community. Special deals on food and drinks at local restaurants for students is the goal in the upcoming months.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If I was bringing a friend to Colorado Springs for the day I would start the day at Garden of the Gods Market and Cafe for breakfast. I highly recommend the donut holes. I would then take them to the Garden of the Gods Park to see the beautiful red rocks as well as get a great view of the magnificent Pikes Peak. I would then head down to Azada Mexican Grill to enjoy amazing burritos and other Mexican cuisine. I would spend the afternoon exploring Old Colorado City’s unique shops and history. I would then have dinner at Pizzeria Rustica for astounding and true Italian style pizza. During the evening I would recommend COATI, Jose Muldoons, Tony’s, and T Byrds Tacos & Tequila as all great spots to grab a drink.

Who else deserves some credit and recognition?
The success I have had in creating CO Springs Eats is firstly due to the large Colorado Springs population that are eager and willing to support the local communities restaurants and small businesses. I would also like to thank Susie Renehan for her extensive work on reaching out to new restaurants. Would lastly like to say thank George Schlesinger and Dylan Wells for their contributions with emails, posting pictures, and attending events.
