We had the good fortune of connecting with Ausitn Rollison and we’ve shared our conversation below.

Hi Ausitn, what’s something about your industry that outsiders are probably unaware of?
In the food truck industry, there are a lot of unknowns, People don’t understand the work that is put into the business off the truck. Food trucks have a lot of the same ” out of office” work that most restaurants have, staffing, food orders, etc. The big difference here is the extra work getting customers. While restaurants can do advertising and other ways to bring costumers to them, food trucks don’t have it as easy. Food trucks must become intimately attuned to the communities they serve. They must know the special events in the community, other trucks so ensure proper etiquette, and form relationships with event planners public and private. This requires a near obsessive “ear to the ground” approach that leaves little room for exterior social lives. It is fulfilling though, the friends you make in this industry do become like family. Food trucking, unlike many of the other industries I have worked on, develops close relationships, even with those you compete with. You will develop a close-knit network that you can lean on to support you and find meaning in supporting others inside it.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
In 2022 I closed my political consulting company to peruse food trucking full time. The work can be hard but no work I have done is more fun. The confections made make it all worth it. The Pizza Box Truck has the goal to be the largest Pizza Truck in the state by 2025. The work we have done, and the already meteoric rise proves that we are on track to meet that goal.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Denver has some of best food truck culture in the country. A tour of the trucks along the I-25 corridor would be a must. Garden of the gods, Bishops Castle, and Hanging Lakes are fun places. Spending a few nights camping and fishing in Estes Park are always an exemplary time.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
First of all, I need to recognize my Grandparents, my grandfather is the greatest man I know. He taught me how to work hard, be reliable, and what it means to be a man. My Grandmother has been the person in my life that has supported me above all else. She helped raise me when others couldn’t and always impressed upon me that I could do anything and be anything I wanted to be. My Father, my siblings, and many friends have worked to solidify my confidence to take risks and bet on my own knowledge and abilities. I also need to thank 2 great people that made this venture possible, Nikko and Vaja (Owners of Original By Greeks) have showed me and my partner’s unwavering support. Their guiding hand and help has made this dream a reality, and without them there is no way we would be a successful as we are. Finally, most importantly I need to thank Jesus Christ, His grace and companionship is what got me through some harsh times, and it is in prayer that I find the most answers to life’s most pressing questions.
