We had the good fortune of connecting with Caitlin & Thomas Brome and we’ve shared our conversation below.
Hi Caitlin & Thomas, can you walk us through the thought-process of starting your business?
In the world of hospitality you have to be a hustler by nature! You’re either hustling for your dreams or someone else’s. Either way you’re putting in the work. Working the odd hours, behind the scenes, around the clock to pull it all off. After years of learning from the successes and failures for others in our field, we made the choice to build our own dreams.
What should our readers know about your business?
Butcher and The Blonde started as one little food truck in 2014, serving the many craft breweries in our hometown.. With our backgrounds in catering and event management, we knew we wanted to start offering catering services for weddings and special events. We organically found our niche in the Colorado “outdoor/farm wedding” world, where we saw the opportunity to bring our kitchen with us anywhere, allowing us to turn any field or farm space into an epic event space. Our catering business took on a life of its own and we quickly needed a second food truck to keep up with the high demand. With two food trucks and a growing catering company we knew the next step was moving out of shared kitchen spaces and finding a brick and mortar space to call home. In 2019 we found the perfect kitchen space with a small restaurant storefront. I can’t even tell you how thankful we are for our sweet little restaurant in Frederick CO! With the loss of almost all of our catering business in 2020 due to COVID 19, we were blessed to have a space that allowed us to keep going despite the devastating circumstances. We had to get creative! Some of the fun things we have implemented this year include a pop up patio space and turning our original food truck into an ice cream truck that is permanently parked on our patio. We have always offered fast/casual, street style – comfort food so integrating curbside pick up came easy for our team, we will continue to offer this service to our community. We also plan to offer take n’ bake meals as well as house made sauces, soups and gourmet goods this fall/winter and beyond. We have proven to ourselves (this year especially) that our ability to adapt and get creative is what keeps us going and thriving even when times are tough!
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Well.. to say we don’t get out much would be an understatement.. Owning a small business and living in the times of COVID we truly have not been anywhere in longer than we would like to admit. Places we are missing Big Time are : Red Rocks, Rockies Games & Rooftop patios ..
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Our daughter SAGE is by far our biggest fan and driving force !! Before we had her we knew we wanted a family, which in our industry a work/home life balance is always a huge juggle. She’s a trooper! She loves to come to work with us, taking orders and talking up our business to anyone who will listen. She’s proud of us and thinks we’re cool and that motivates us to keep going everyday.
