We had the good fortune of connecting with Jennifer Meek and we’ve shared our conversation below.

Hi Jennifer, as a parent, what do you feel is the most meaningful thing you’ve done for them?
Being the mom of two young children makes me strive to work harder to teach them the value and importance of hard work. Teaching them that hard work and persistence pays off!

Alright, so let’s move onto what keeps you busy professionally?
I am a self taught cook and baker. A lot of cookies and treats were eaten, tested, and burned until the recipes were perfected. Starting something from nothing takes a lot of hard work, persistence, and vision. It has been hard but I have learned so far that if you are patient and keep working at your craft, it will pay off! The hardest thing has been balancing the cookie business, family life, and a career as a registered nurse. My family and kids always come first. They love being a part of creating, designing, and baking which is why I named the business after them, Grayson and Chase.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
My husband’s best friend from high school actually just visited for a week! A trip up to Mount Evans is an absolute must. Reservations are now required though. Then visiting Colorado Springs to hike through Garden of the Gods and take the train up to Pikes Peak is a must see! A concert at Red Rocks is an awe inspiring experience. There’s so much to see and do in Denver! As far as food goes, I mainly make sure to cook and bake good food while he was here. I recently made a peach crisp with Palisade peaches that was to die for when a friend was visiting a few weeks ago! Los dos Potrillos for mexican food and Toast for brunch are always places we take our visitors too when they visit. Before going on a hike, picking up breakfast burritos from Santiagos is always a good idea! I have lived here since 1998 and still haven’t hiked everywhere and seen everything on my Colorado bucket list.

Who else deserves some credit and recognition?
Gray & Chase Baking Company is a dream and business that would not even exist without the help and support from my husband and most importantly my cookie customers. I am humbled that people come to my classes, eat our treats, and show up at our events to support and enjoy our goodies!
