We had the good fortune of connecting with Jodie Lavoie and we’ve shared our conversation below.

Hi Jodie, what’s something about your industry that outsiders are probably unaware of?
The amount of time it truly takes to create custom cakes, cookies, and specialty desserts. Some of the tv shows make it look like these amazing, elaborate cakes can be made in just a few hours, however many of the contestants are given the themes ahead of time and are even allowed to bring pre-made decor with them on the show. This unfortunately gives our customers unrealistic expectations of our pricing structure, when it really takes 5x the amount of time to execute an elaborate design like that.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I have worked in the fine dining and hospitality industry for over 15 years, where I was introduced to the art of pastry and cake decorating. I love to be involved in every step of the design process for each and every cake and dessert I create. I stand behind clean work and consistent, gourmet style recipes, using the finest and freshest ingredients available. I have been published in industry leading showcases and websites and I have competed on “Cake Wars” on Food Network. I did not win my episode of “Cake Wars”, and I felt like a complete failure, however, people loved that I was asked to be on the show and I often get emails/fan requests for autographs, which is pretty cool! Even after the setback of not winning, I was able to learn from my experience and grow my business exponentially!

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I absolutely love going to Vail, Idaho Springs, Rocky Mountain National Park, Rockies games, Broncos games, and to upscale restaurants, such as Capital Grille, Eddie V’s, STK, and Morton’s!

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I am entirely self-taught, however, I wouldn’t have made it to where I am without a lot of the Cake Designers and Bakery Owners before me. I truly admire and have learned so much over the years from Buddy Valastro, Liz Marek, Natalie Sideserf, Simicakes, and Sweet Sugarbelle, to name a a few! Their endless recipes and tutorials are GREAT for beginners, as well as advanced cake artists. In regards to the business side of things, I do have a degree in Business Management, however I look up to Kake King and Sugar Cookie Marketing (FB group)-they’re always dropping knowledge!
