We had the good fortune of connecting with Lyndsay Hope Pullem and we’ve shared our conversation below.

Hi Lyndsay Hope, can you walk us through the thought-process of starting your business?
I was laid off from my Executive Pastry Job after the pandemic. I had nothing to do and no income. People had been asking me for years to start my own bakery business. I saw other people doing food businesses out of their homes early on and thought I should be doing this too. There was a market for cakes still and especially vegan items. I wanted to have something to do to stay busy, feel purpose, as well as make money and serve the community.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I’ve always been an artist. I paint, draw, make music, cook, bake, dance, and am just all around a creative person. I’ve always had a passion for baking and pastry. I’ve been an ethical vegan for most of my life with a focus on animal rights. It’s been a skill of mine to make everyday foods and “veganize” them. Early on this was more difficult with there being limited resources for substituting crucial baking ingredients. Over time we’ve seen the advent of so many amazing products that can fully take the place of Dairy and Eggs. I can provide a product that has equal flavor, quality and is plant based. If I didn’t tell you, you wouldn’t even notice it was vegan.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I love the sights; Golden Gate Bridge, Bay Bridge, Ferry Building, Twin Peaks, Chinatown. For food I’d suggest places like Wildseed, Golden Era, Vida cantina, Pena Pachamama, and Nourish Cafe.

Who else deserves some credit and recognition?
I want to give a shoutout to all of the customers, friends and colleagues that encouraged me to get started and to keep going. You all built this business to where it is today and will continue to do so. Also Victor and Chale. The two of you were on the grind early in the game too. We all teamed up to help support each other during a really difficult time for service workers.
