Meet MARKETA DISTASI | Baker

We had the good fortune of connecting with MARKETA DISTASI and we’ve shared our conversation below.
Hi MARKETA, can you tell us more about your background and the role it’s played in shaping who you are today?
I come from a tiny village in the Czech Republic where my grandmother was the queen of baking! A self-taught wizard, she whipped up kolache, cakes, breads, and anything else your sweet tooth could dream of. She’s the one who sprinkled the magic dust of baking love in my life. Her apple strudels and poppy seed kolache still dance in my memory every time I think of her. She was the Yoda of baking, sharing tricks and the “how-tos” of creating mouth-watering treats, from what pitfalls to dodge to what delicious details to watch for. Baking was her jam, and she passed that sweet passion right to me.
Though I’ve danced through various jobs and businesses over the years, the love for baking never skipped a beat. I’ve dabbled in different online baking classes and played the “oops, that didn’t work” game with recipes until I nailed down the perfect concoctions.

Alright, so let’s move onto what keeps you busy professionally?
What distinguishes me from the majority of bakers in the U.S. is my passion for crafting European small cakes and pastries. Coming from the Czech Republic, my heart is entwined with the allure of these delightful treats. The essence of European cakes lies in their flavor; American cakes often lean towards an overwhelming sweetness—an extreme, if you will, in the eyes of a European. In contrast, European small cakes are a symphony of decadence, crafted from the finest elements: real butter, heavy cream, luscious fresh fruits, and premium cake flours. My creations embrace purity, free from artificial additives and an overload of sugar. I revel in blending the elegance of European baking with the artistic flair of American decoration trends, particularly in the realm of custom cakes.
I don’t just make cakes. I also make Czech dumplings, fresh bread, traditional Christmas cookies, rolls aka “rohliky” and other Czech and Slovak yums!

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I hold within my heart a tapestry of cherished places in Colorado, where I have welcomed my family from Europe, each captivated by the magic of the landscape.
One lovely destination I wholeheartedly recommend is Breckenridge and Frisco. The journey to this locale is a delight unto itself, with scenery that steals the breath away. I find joy in the quaint Frisco Historic Park Museum, and there’s nothing quite like gliding across the shimmering waters of Lake Dillon. Should you find yourself in Breckenridge, do not miss Mom’s Baking Company on Lincoln Avenue. This delightful café, owned by my dear friend Ema, is a haven for those who adore exquisite baked goods, delicious coffee, and a hint of Europe.
From the majestic mountains, a visit to Boulder beckons, where you can stroll along Pearl Street, discovering charming eateries and delightful boutiques. Recently, I wandered into the Avanty Food and Beverage, nestled at the corner of 14th and Pearl—a true gem.
Ah, but if your travels take you to Denver, you must immerse yourself in the city’s vibrant essence! Denver is brimming with wondrous experiences. For families, the Aquarium, the Zoo, and the Science and Nature Museum are treasures awaiting exploration. If you’re adventuring solo or with friends, consider a visit to the Museum of Illusions or the Tower Cabaret. Among my favorite Denver haunts are Hamburger Mary’s for a delightful brunch, the Denver Central Market for a lively lunch in its trendy neighborhood, and for dinner, The Golden Mill in Golden—where you can savor your meal while enjoying live music.
And if your sojourn in Denver graces the summer months, be sure to embrace the enchanting Red Rocks Concert scene!

Who else deserves some credit and recognition?
The grandest applause goes to my incredible husband, the ultimate cheerleader of my wild business dreams! A massive thank you also to baking wizard Helena Fleglova and her magical HF MASTERCLASS books and classes, which taught me the secrets of French pastry. But the most heartfelt shoutout belongs to my late grandmother, who sparked the baking passion within me and shaped the person I am in countless ways.
