Matilda & Enzo, thanks for joining us again. Just to level set a bit for folks who may have missed our last interview together, can you briefly introduce yourself?
We’re La Creperie & Bakery of Fort Collins, a family-owned business with deep roots in the tradition of French baking, stretching all the way back to Brittany, France, the birthplace of crepes and galettes. Our founder, Jean Claude, grew up working in his family’s bakery in Brittany, which sparked his lifelong passion for artisan baking. After running his father’s bakery for several years, Jean Claude moved to Key West, Florida, where he owned and operated “Croissants de France” for 17 years, earning a beloved reputation for his authentic French pastries and dishes.
In 2009, Jean Claude and his family relocated to Fort Collins, Colorado, where he established La Creperie & Bakery. Since day one, our focus has been on creating high-quality, authentic crepes, galettes, and pastries, made fresh without preservatives or artificial ingredients. We’re proud to continue this legacy today under the leadership of Jean Claude’s children, Matilda and Enzo Lucas, who grew up in the bakery and, after college, decided to take the reins of the family business. While we honor the traditional techniques Jean Claude passed down, we’re always looking for new ways to evolve and introduce fresh products that reflect our passion for quality and creativity.
Looking ahead, our long-term vision includes expanding with a second location, either in Windsor or downtown Fort Collins, to bring our artisan French baked goods to more people in our community. Through it all, we remain committed to the core values that have always defined La Creperie: exceptional quality, a welcoming atmosphere, and a genuine love for what we do.


Alright, so our main goal today is to give our audience an update on what you have been up to since our last conversation. We’d love to hear how things are going and what you are most looking forward to or excited about these days.
Since our last conversation, it’s been an exciting and transformative period for us here at La Creperie & Bakery! We’ve been working hard to honor our family’s legacy while embracing new opportunities to grow and evolve.
One of the most significant developments is our idea to expand within the next couple years. As we continue to nurture our roots in Fort Collins, we’re thrilled about the possibility of opening a second location, either in Windsor or downtown Fort Collins. This is a huge step for us as we look to share our passion for authentic French crepes, galettes, and pastries with an even broader community
At the same time, we’ve been focused on modernizing our operations and staying in step with technology to improve efficiency and customer experience. From streamlining our internal systems to exploring ways to simplify and smooth out day-to-day processes, we’re looking for ways to make the business run more smoothly and offer even better service.
It’s been an exciting, challenging, and rewarding journey so far, and we’re grateful for the continued support from our loyal customers and the Fort Collins community. Looking ahead, we’re filled with anticipation for what the future holds – from potential growth with our second location to the continued evolution of our menu and operations. We’re ready for the next chapter!

When you look back on your life, what are three things you expect to be proud of?
A close family – Maintaining strong, loving relationships with my family has always been a priority. Watching the next generation carry on our family traditions, like at La Creperie, brings me immense pride and joy.
Work ethic and success – I’ve always been dedicated to my craft and committed to creating something special. The hard work that has gone into building La Creperie & Bakery, and the success it has achieved, is something I will always be proud of.
Impact on the community – I hope to look back and feel proud of the positive impact I’ve made in my community, whether through offering delicious food, creating a welcoming space, or contributing to local growth and culture.
