Hi Sarah, can you walk us through the thought-process of starting your business?
The idea of starting my own business really grew from childhood memories—baking cookies with my mom and sisters in the kitchen. It was always more than just making a treat; it was about connection, creativity, and joy. Over the years, that love for baking never went away. I kept dreaming about taking the next step, turning something so personal into something bigger—something I could share with others. Starting Quinnie’s Cookies felt like the natural evolution of that dream: a way to spread happiness, one gooey, delicious cookie at a time!

What should our readers know about your business?
Quinnie’s Cookies is all about elevating the classic drop cookie—taking something nostalgic and making it feel new and indulgent again. What sets us apart is our commitment to high-quality ingredients, rich and unique flavors, and that signature thick, gooey shape that makes every bite feel special. We use organic flour and only the best ingredients because we believe you can taste the difference—and we think you deserve the best.
I started this journey very humbly—just sharing cookies by word of mouth. Over time, thanks to the kind words and reviews from our amazing customers, Quinnie’s Cookies began to grow. One big lesson I’ve learned is the power of a good review—how much it means when someone takes the time to tell a friend or post online. That kind of support has helped carry this dream forward.
It hasn’t always been easy—there are long nights, hard decisions, and learning curves—but every challenge has taught me something new. What keeps me going is trusting in God’s plan and the joy cookies bring to people. I want everyone who takes a bite of a Quinnie’s Cookie to feel that same happiness I felt baking with my family growing up. This brand is built on love, quality, and joy—and that’s something I’ll never compromise on.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
As a working mom of three, my version of showing someone around is a mix of fun, food, fresh air, and a little flexibility. I love where I live—between the charm of Castle Pines and the buzz of Denver, there’s truly something for everyone. So if my best friend came to visit for a week, Below is an example of what we could do:
Day 1: Easy Arrival + Local Vibes (Castle Pines)
Start slow with coffee and breakfast at The Exchange Coffee House. Take a walk through Elk Ridge Park to stretch our legs and catch up. Then later, a cozy dinner at Danielle’s Scratch Kitchen.
Day 2: Hiking + Castle Rock Charm
Head to Philip S. Miller Park for a hike or the challenge incline—amazing views and great energy. Lunch at Union – An American Bistro in downtown Castle Rock, followed by browsing cute boutiques and shops. For dinner, either hit up Los Dos Potrillos Castle Rock or La Loma.
Day 3: South Denver Stroll + Sweet Treats
Morning coffee at Monk and Mongoose Coffee in Lone Tree, then a scenic walk at Bluffs Regional Park. If the kids are in tow, Civic Green Park in Highlands Ranch is a fun pit stop. Lunch at Breckenridge Brewery, then maybe some shopping at Park Meadows. End the day with pizza at Graneli’s and a cookie taste-test from Tiny’s Bake Shop goodies!
Day 4: Downtown Denver Day
Time to hit the city! Brunch at Snooze then a stroll through RiNo to check out the murals and grab a drink at Odell Brewing or Improper City. Dinner at Alma Fonda Fina. End the night with catching a show at a Red Rocks concert.
Day 5: Reset & Recharge
After a big day, something slower: morning yoga or a spa session at Woodhouse Spa in Castle Pines. Lunch at Trestles Coastal Cuisine! Afternoon cookie baking or behind-the-scenes fun at Tiny’s. Maybe a relaxed movie night or backyard hangout with the kids.
Day 6: Family Day + Denver Exploration
Take the whole crew to Meow Wolf or Denver Zoo. Lunch at Root Down in LoHi. If we’re feeling ambitious, maybe swing by Little Man Ice Cream before heading back south.
Day 7: Wrap-Up Brunch + Park Time
End with a mellow morning brunch at Devil’s Food Bakery in Wash Park and then walk around the park itself, and maybe one last cookie snack for the road!

Who else deserves some credit and recognition?
Without a doubt, my shoutout goes to my family. My mom, for always letting us make a mess in the kitchen and encouraging our creativity from day one. My dad, for showing us what it means to work hard and stay dedicated. My brothers and sisters, who have always been there for each other, cheering one another on and chasing big dreams together. My husband, who’s been my rock and biggest supporter through every high and low. And my kids—who bring so much joy to the journey and keep me smiling, even when things get tough. This dream wouldn’t be possible without them!
And above all, I’m thankful to God—for the opportunities, the strength to keep going, and for opening doors I never could have imagined. His guidance has been the foundation of this journey
