We had the good fortune of connecting with Scott & Mike and we’ve shared our conversation below.

Hi Scott & Mike, what led you to pursuing a creative path professionally?
We have always been in creative spaces, as both of us are also been drum and bass Dj’s for the last 20 years are heavily into music. We feel creating good food and making people dance has a lot in common. We do best when we have full creative control of the products we put out. We wanted to have a space where we could express our fun side through food, and that’s what led us here to opening a food truck. Over the years we have come to understand about ourselves that we do be in situations where we can adapt, maneuver, and depend on our creativity to make something shine.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
One of the biggest things that sets us apart is our ability to adapt and change our menu, We also feel our sourcing of the ingredients sets us apart. We try to stick with local “mom and pop” operations. We have spent the last year building relationships with a lot of great local companies and are always excited to create with what we source from them. We think that our excitement about what we use translates into our menus. There have been some challenges in that aspect as well, being that Colorado is seasonal and many of the indoor green houses are already allocating their veggies to small grocers and bigger restaurants. So sometimes we have to source more regionally, but we get what we can locally. When you think of Revolver Food Truck, we want you to taste the best of what Colorado has to offer, with our own fun twists on some local, regional and even international cuisines.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Well, I think the first stop for every visiting guest is Red Rocks. As musical people there is just no place like it, no matter what genre of music you’re into. Some of our favorite spots to take our out of town friends for food and drinks (we we aren’t feeding them) Rioja, anyplace in Union station, Benny Blanco’s pizza, the 1up, stoneys down town, any of the breweries we work at (lone tree, resolute, living the dream, max taps) they are always featuring great local food trucks. For night life, The Black Box is really one of a kind, a true underground feel and The Church nightclub is a great spot and really cool venue. Meow wolf is really cool too.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Our friends and family have really been our biggest inspirations and supporters. We honestly would not have the success we have had if it wasn’t for all of them. We have also had some great mentors from parents, martial arts instructors, teachers, executive chefs and friends who have proven everyone wrong and become extremely successful doing what they love.
