Hi Zoe, what was your thought process behind starting your own business?
We decided to start our own restaurants to share our love for food and to leave a legacy for our kids. Our goal was not only to create delicious meals but also to showcase our culture and its rich flavors to the community. We wanted to establish a welcoming space where families can gather, and our children can learn the value of hard work and cultural pride. By building this business, we are not just feeding people; we’re fostering a sense of belonging and making a cultural impact that we hope will inspire future generations.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Our restaurants, Colonnas and Cencalli, are not just places to eat; they embody a philanthropic approach to doing business, allowing us to engage deeply with our community in meaningful ways. We are passionate about giving back, whether through local initiatives or partnerships that uplift those around us.
We take pride in serving authentic food made with love, reflecting our culture and upbringing. Each dish is prepared with warmth and care, helping to bridge our past with our present and share our culinary heritage with our community.
What sets us apart is our commitment to creating an environment of friendship and support. We strive to be a hub of collaboration and togetherness, welcoming everyone who walks through our doors. We want the world to know that we are more than just an eatery; we are a community space where love and connection flourish.
While the journey hasn’t been easy, the challenges have taught us resilience and the importance of adaptability. With the guidance of my husband, Andres, and the support of our kids and community partners, we continue to grow and thrive, inspired by the belief that our story can positively impact others.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend came to visit, we’d have an epic week! We’d kick things off with hiking in Rocky Mountain National Park and chill by Grand Lake. Then, we’d hit the slopes in Breckenridge and Vail for some skiing and cozy nights by the fire. We’d definitely catch a concert at Red Rocks and explore the cute shops in Golden. I’d show them around Boulder and stroll through downtown Littleton, stopping to grab bites at Denver Central Market and visiting some of our favorite local spots. It would be all about good times, great food, and unforgettable memories!

Who else deserves some credit and recognition?
I want to dedicate my shoutout to my husband, Andres, who truly embodies the reality of the American dream. His journey from a very humble upbringing with limited education to becoming a successful entrepreneur inspires me to push myself continually. He has not only exceeded expectations but also dedicates his time to guide and mentor many, including me.
I also want to recognize the unwavering support of my kids. Without their love and understanding, we wouldn’t be able to pursue our dreams in this business. They motivate us to create a better future for our family.
Finally, I can’t forget our amazing community partners. There are so many that naming them would be a challenge, but each has played a vital role in our journey by offering guidance, advice, and knowledge. Their support has been invaluable as we navigate the entrepreneurial landscape. Together, they have shaped our story and helped us grow.
