We had the good fortune of connecting with Randall Julio Chambers-Vargas and we’ve shared our conversation below.

Hi Randall Julio, we’d love to hear more about how you thought about starting your own business?
I have been in the commercial restaurant industry for almost 20 years. The commercial restaurant industry is full of unhealthy lifestyles, alcohol abuse, low wages. I worked for a few chefs that were the most dysfunctional people I had ever met. I saw what my future might  be like…. It was disappointing.  I realized I had to figure something out.

Not only are the conditions of the chef lifestyle unconducive to a healthy mind and body, but the restaurants themselves often have such a small profit margin, that they sell food that they aren’t proud of. All in the name of the bottom line. It was just something I couldn’t see myself doing anymore. I knew I was a better cook than most, and I knew my time was being underutilized, and had to do something….

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Luxury Meals From Home LLC are a husband and wife team. Locally owned and operated, Latinx owned as well. I am an award winning chef and a wikihow co-author. I spent the last 15 years in commercial restaurants, working for some of the top chefs in Denver. What sets us apart? We know what we are doing. I’ve sampled many personal chefs throughout the years, and one thing I’ve noticed is that a lot of these personal chefs don’t have the experience to deliver a great product. Or perhaps they focus too much on the photo rather than the taste. For what my clients pay, I need to deliver a great product. You will always have a great meal with us.

I am one of the only South American personal chefs in the city. With us, you will have an authentic meal. No matter the cuisine. At the same time, authentic isn’t always best. We create food that’s made for YOU. There are certain limitations in a restaurant. One of them being is that the food is created to satisfy the middle. We are here to satisfy YOU.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Denver is a great city. If it were me I would try local Colorado delights. Santiagos, Chubbys, Beaujos, Atomic Pizza, Benny Blancos, Casa Bonita is a must. Absolutely must get a corn dog from Sputnik.
Sights?  Go to Summit county. See the troll. Have empanadas in Dillon. Ski somewhere. Check out Meow Wolf. Estes park peak to peak. Check out the breweries, SO MANY! Santa Fe art. Get a red chili hot dog at Mile High Vienna Stand. Go to Taco de Mexico. Find Mushroom park in Englewood. See the metal plated dog by Gotham city off of I-25 I believe. So many…. Go to Bar bar by yourself on a Saturday and see a terrible grindcore band. Bring cash. Try to find Ron’s House.

Who else deserves some credit and recognition?
My wife. She was the only one that said “go ahead and do it what’s stopping you!”

Chef Jessie Prier, my former mentor, and one of the few people that encouraged me along the way. He can be found cooking his heart out somewhere in Denver….

Kelly Schexnaildre of Merf’s. She showed me that there can be a better life. You just have to go ahead and try.
