We had the good fortune of connecting with Barclay Dodge and we’ve shared our conversation below.
Hi Barclay, what habits do you feel helped you succeed?
I am a Type A personality at work. I work hard, have dedicated myself to the culinary craft, I love organization, highly interested in food and exploring new ideas, and stay “plugged-in” at all times. I believe this personality, drive, dedication and perseverance is what has brought me success.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
For starters, I am a flavor hunter, I seek out ingredients and foods with vibrant, intense flavors. I am very connected to nature and the wild ingredients in our local forest. It is here that I find great joy foraging and cooking with these ingredients. Exploring our local forest has inspired me to create the cuisine I put out today.
I got where I am today with long hours in the kitchen, working with great chefs and driven to be to different and express my creativity through the culinary craft. It wasn’t easy, but it was never hard. I have always loved working in restaurants, and love made it worthwhile and rewarding, so it was never hard, just hard work.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I’d take my best friend to one of my favorite local farms to see the crops, animals, the land and visit with the farmers. I really geek out on the farms in our area and am very proud of the farmers. After that we’d go foraging in the woods to gather watercress, mushrooms, pine tips and roots. Of course, our bounty would make it to my home kitchen where we would cook and drink wine. Finally, a dinner party at our table with friends and family would top the night off beautifully.
Who else deserves some credit and recognition?
The biggest shoutout goes to my wife, Molly. She is my biggest supporter, cheerleader, go-to person, and confidant; furthermore, she understands that I am a “Chef” and that I don’t get to spend a lot time with her and our kids because I am most always at the restaurant, she is the most understanding and supportive person in my life.
