We had the good fortune of connecting with Carlo & Erin Nasca and we’ve shared our conversation below.
Hi Carlo & Erin, why did you decide to pursue a creative path?
In short, I believe the talents we have naturally found a way back to us. I didn’t initially pursue a creative career. Although Erin and I are both artists at heart (music, painting, photography, and of course culinary), we first pursued careers in “where can I make the most money with the skill sets I have to offer.” It wasn’t until later in our 30s that the creative careers made their way back into our lives. It became less and less avoidable that, for me personally, culinary is just what I needed to be doing in my life to feel truly fulfilled. I would guess that any artist would say you don’t pursue an artistic career without knowing that putting your heart’s work on the line comes with its risks. But, if you’re confident enough in what you do, you can make it both your love and your livelihood. We are blessed to say that we have been able to make both work in our favor.
Alright, so let’s move onto what keeps you busy professionally?
Fat Tomato Food Truck & Catering is out and about 6 days a week! You can find the truck at Odell Brewing or in City Park at the FOCO Food Truck Rally on Tuesdays. On Wednesdays, we do our corporate catering in the Denver Metro Area. We spend our Thursdays at the Fossil Creek Food Truck Rally in Fort Collins and Severance Food Truck Rally. Most of our Fridays are jam packed with private events, hanging on the patio at Odell Brewing, or other various breweries throughout Northern Colorado. Every Saturday, we’re celebrating the weekend with our friends at New Belgium Brewing! Our Sunday Fundays are spent with ZWEI Brewing in Fort Collins and Sparge Brewing in Wellington! Whether you’re craving our Cubano sandwich, California Burrito, Sweet Chili Chicken tacos, or every single item on our menu- Fat Tomato has your savory flavor cravings covered!
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Whenever our favorites are visiting Fort Collins or we have some down time, you can find us hiking in the Poudre Canyon, catching a sunset at Horsetooth, having a picnic at City Park and hanging on the brewery patios at New Belgium Brewing, Odell Brewing, and ZWEI Brewing. Our favorite foodie spots are, hands down, Lucille’s Creole Cafe and The Welsh Rabbit. For nightlife, you’ll find us at Washington’s (most likely catching a DeVotchKa or Bluegrass show), Pinball Jones, or Social for some speakeasy fun.
