We had the good fortune of connecting with Chris Rubeck and we’ve shared our conversation below.
Hi Chris, we’d love to hear more about how you thought about starting your own business?
Ever since a young age, I have always had a bit of an entrepreneurial spirit. I believe it all started when I was on vacation in Mexico and learned that you could haggle prices! From then it was a string of Dog Walking, Lawn Mowing and Snow Shoveling Businesses. I had been working as a Cook and Chef for about a decade when I realized I wanted to work for myself, and do my own thing. That is where the idea of starting the Food Truck was born. It was a perfect way to break into being a small business owner in my field, and a way that was affordable as well!
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Our main philosophy and goal here at Ruby Ru’s is to deliver awesome customer service! We know we have delicious food, but we also know you can get good food a lot of places. What really sets us apart and creates a memorable experience for people is being able to connect with them and make them feel like they are always welcome here at Ruby Ru’s.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Teocali in Lafayette is a must visit and would be one of our first stops. Birdhouse in Erie is amazing and one of my favorite places.
A trip to Boulder would be in order, Lunch at The Darkhorse and then walking the Pearl Street Mall. Maybe drive up to Flagstaff lookout if there was time.
Always like to take people form out of town to check out Red Rocks during the day when there is no show there. Just such a special and magical place.
Then we would have to head up to Estes Park, check out The Stanley Hotel, and head into the Rocky Mountain National Park!
I am a huge Avs fan, so we would for sure be going to catch a Colorado Avalanche game or two.
Then we would probably just lay low and hang out at my house, taking in an amazing Colorado day full of Mountain Views, Fresh air and Sunshine
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My biggest Shoutout is to the Lafayette Community. I grew up here in Lafayette and it is so special and amazing to be bale to own a small business here. The support of the community, and our family and friends means everything. And its awesome to be able to employ the younger Lafayette generation and mentor them and pass own Lafayette traditions and knowledge!
