We had the good fortune of connecting with Ella Colimore and we’ve shared our conversation below.

Hi Ella, what do you want people to remember about you?
I want people to remember me by my positivity and helpfulness. I love to help people learn new things and feel their best by sharing my recipes and my story on my Instagram @mindfulnourishingec. I want people to remember that I overcame something and turned it into a passion. Choosing recovery blessed me with discovering my love for cooking and baking. It made me realize I can be whatever I want to be. I want my legacy to include that I never cared what others thought about me or what I do. I post whatever I want because I like it.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I create content for my small accounts on Instagram and Tik Tok. On Instagram I am @mindfulnourishingec and on Tik Tok I am @ellacolimore. I create recipes and outfit inspiration content. I am excited to continue to create content and build more of a following as the years go on. It is hard as a small creator trying to grow on these huge saturated platforms, but I try my best to be unique and not compare myself to anyone else in the space. I am excited for some collaborations coming up as well and my school year ahead at the University of Denver. I want people to follow me to follow my journey in recovery, cooking, fashion, and just my life.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would take my bestie to a workout class in cherry creek at ether Barry’s Bootcamp or Corepower Yoga. I would then take them to get a matcha at aviano coffee, syrup, Barrys has awesome smoothie as well, and so does clean juice. I love going on walks around Washington Park! Great Dinner or lunch spots are Sushi Den, Cholon Downtown, Cherry Creek Grill, White Pie, Home Grown, True foods, and Flower Child. As a night cap I love Bonnie Brae or Sweet Cow Ice cream!

Who else deserves some credit and recognition?
I want to shoutout my mom, Tiffany Colimore. My mom will always be the person I can go to to talk to when I am experiencing a hard day in recovery. She is my biggest cheerleader in all that I do and the best sous chef when I am home! She is the most positive and cheerful person I know and she inspires me to choose happiness everyday.
