We had the good fortune of connecting with Hosea Rosenberg and we’ve shared our conversation below.
Hi Hosea, what was your thought process behind starting your own business?
I have always loved new challenges. Working for myself is the ultimate challenge. I wanted to put myself out there and do things my way. I have not regretted a single day since. Win or lose – it’s all on me at this point.
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I own and operate two businesses: Blackbelly and Santo. Blackbelly started as a 1-man catering outfit. It has grown to a full service, high-end restaurant, a butcher shop, a market, and a thriving catering operation. We have been in business for nearly a decade as a catering outfit, and over 6 as a restaurant. We are the only whole animal butcher shop in Boulder, and also the only business licensed to make and sell our own cured meats. We are truly one of a kind. Santo is a love letter to my home town of Taos, New Mexico. Very few people know the difference between New Mexican food and Mexican food, so I wanted to change that. It is a very special, very unique place with a lot of culture. I’m hoping that we can share that beauty with the world. Restaurant life is incredibly challenging. It’s very hard physically, mentally, and financially. There have been some daunting challenges and some very tough moments. But I believe that if you surround yourself with smart, motivated people, you can achieve anything you put your mind towards. Without my team, I don’t think I would have succeeded. Clearly, Covid-19 has made everything even harder. But we are persevering and expect to come out of this stronger than ever. Our brands stand for quality. We think of both restaurants as welcoming places with exceptional food and service. Nothing too stuffy, but something you crave and want to share with your friends and loved ones. It’s hard to put this all down in words. You must experience it to truly appreciate it.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If you’re visiting Boulder, you need to do it outside. There are so many wonderful places to hike and check out – Chautauqua, Rocky Mountain National Park, Boulder Canyon, Boulder Creek, and on and on… During the winter, you are not far from many many great ski areas. It’s something I love to do. And in the summer, it’s all about mountain biking, camping, and hiking. CU Campus is a beautiful campus to check out. Pearl Street is the most obvious answer. It’s hard not to fall in love with Boulder if you’re strolling down the mall on a sunny summer day. And you must check out the dining. Especially Blackbelly and Santo!!! And don’t forget to get some coffee. We have a number of great spots – my current favorite is Beleza.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Too many people to name here! First and foremost – my wife, life partner, and business partner, Lauren. She is my rock. Second is my baby girl, Sophie. She is dealing with more hardships than anyone should ever face – especially at 3 years old. She is my inspiration to keep going and to face all adversity. A few more: My business partner, Peter Olivo. Without him, I don’t know if I could have done all of this. My mentor, Dave Query. I learned the art of the business through him. Cooking is easy, but making money on food is hard. My management team – Ian, Korey, Ashley, Irving, Trevor, Chris, Isaac, Kelly, Ben, Jason, and all those who have moved on. This crew does the heavy lifting and helps me look good 🙂 The entire community of Boulder! I am very fortunate to have a following who keeps my restaurants going. Without them, we would cease to exist.
