We had the good fortune of connecting with Jeremy Gomez and we’ve shared our conversation below.

Hi Jeremy, what was your thought process behind starting your own business?
Showing my kids that anything is possible if you want it hard enough. I just want them to know that if they have a dream they can make it happen because this was mine.

What should our readers know about your business?
I bring Colorado something that nobody else does. I take exotic meats such as rattlesnake, rabbit brats or kangaroo meat and put my own spin on it. I make it different. My most popular item that you will not find anywhere else is the Pueblo Pig Burger. Its a wild boar, bacon, cheddar cheese and green chili patty topped with a fire roasted pepper and a smokey cheddar sauce that I created. It is one of a kind and people always come back for it.

No, this process was not easy for me. Between not getting my food trailer on time from the company I ordered it from to things breaking. Every single step of it was a struggle. But it is worth it to me to keep going and pushing so I can get my food out there. Because I promise you, you will not taste anything else like it! It takes a lot of patience to own a food truck and I love it.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I like to support and watch our community grow so you will find me at a lot of the small businesses around town. You will also find me buying food from the local food trucks. My family and I drive over an hour to come down to eat at the food trucks, enjoy the food then go back home. It’s so worth the drive for us. I love giving them my business. It seems everywhere and anywhere I go out here, I find something new and fun. I truly love being in Colorado

Who else deserves some credit and recognition?
My Parents. My Grandmothers. They are the ones that have taught me a lot about what I know now. My father owned a pizza restaurant in Connecticut in the 1980’s with his brother. I used to help my dad after school all the time, which is how I got my start and love for cooking. I also grew up watching Julia Child and the original cooking shows on TV with my mom.
