We had the good fortune of connecting with Julien Jeannot and we’ve shared our conversation below.
Hi Julien, what’s the most important lesson your business/career has taught you?
Be prepared for the unprepared
Alright, so let’s move onto what keeps you busy professionally?
I worked in France, Germany, London, Canada, Las Vegas, California and now we are here in Lafayette; I worked in Michelin stars restaurants, opened big Casino, as well as small bakeries, catering company, or even fast peace casual restaurant. I learned every job that the hospitality industry has to offer, I started when i was 14 years old from being a chef, to be a bartender, to be a receptionist, housekeeper or to be a dishwasher. There is no little job, they all have a very important role to make a business successful; now I know why the FOH will put all orders in the system in the same time and why the baker can’t just bake more bread right now as examples. Every time I took a new job, I always told myself “I am not qualified, I will not have the job, and I will not be able to succeed”, but every time I got the job and I put 100% of myself. I worked countless hours but for most part, I enjoyed every minutes.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Go for a couple days camping in Brainard lake is a must! Fishing, hiking, BBQing. That’s the best!! We love to go to Fort Collins and hang out downtown, a few bars with nice cocktails. The next day, we got to go in Denver’s Botanic garden and walk around Larimer’s square and eat at Union Station or Bistro Vendome.
A day can start at Left Hand Brewery then go to Avery Brewery and ending up in Downtown Boulder at Upstairs, may be finishing the night at Sundown Saloon?
Who else deserves some credit and recognition?
Family, some came from France for the opening to help us out to any kind of way they could (even babysitting our employees baby) and some from California are coming as many time as possible to support us and our daughter. So many friends helped us building the side of the business, like the website, legal advises, paint…
Finding the right people to be surrounded have been. so important to us, like our landlord that went way beyond what was needed to be done and our contractor that worked days and night to make our dream come true.
