Meet Justin Brown | Chef/Owner

We had the good fortune of connecting with Justin Brown and we’ve shared our conversation below.
Hi Justin, can you walk us through the thought-process of starting your business?
I was enamoured with trying to find a way where I could make an impact on this planet. I knew I always wanted my own restaurant but, for what reason. I realized at some point it was because, of the people that I get to interact with and meet, help grow into better people and the most important part of being able to learn about oneself during that process. I wanted to of course be able to make money doing what I love as in creating food but, the most important part for me was being around the right people to attain the same goal. For me that is creating an awesome dining experience while educated our guests on cuisine, libations and culture.
Let’s talk shop? Tell us more about your career, what can you share with our community?
Food is what has got me here and I am forever grateful. I think the intricacies that different cultures have taught me about cuisine is what keeps me going. I grew up in Houston, Texas a huge meting pot that introduced me to so many different cultures from around the world in which I was able to learn new techniques and, taste new foods. I have never had the opportunity to travel as I hope to but, I can still travel to different places with new spices, herbs, new sauces, and new techniques. I can use that to immerse myself into a new ingredient and travel into a new world myself. I love where that takes me and that continues to fuel me everyday.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Colorado gives us so much that I think last time I had some friend here we really took a huge loop through Northern Colorado. One of the main reasons I stayed here was the opportunity to see the landmarks and nature that this amazing state provides. I am a top of person that wants to take in what ever this earth can so me while I am here. We definitely took advantage of the mountains and, take a drive through the many canyons we have to see. I can remember the first time I experienced it I was hooked. I love to show people a show at Red Rocks and, last time we even went white water rafting! To be honest with you the possibilities are endless and, I think that is what I enjoy so much about here.
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I have a lot of people to thank for getting us here where are today. There are some people that took a chance on me to get here and, I have no words that can describe how much I am thankful.. There are the other people that did not help me monetary but, that supported us through the times where we had doubts where this would end up. To all of them my mother, Layne, Baylee, Cheyenne, Roche family, FMS Bank, the Talent family and the hundreds of other customers that supported us along the way.
