We had the good fortune of connecting with Lauren Storeby and we’ve shared our conversation below.

Hi Lauren, is there something that you feel is most responsible for your success?
Community. Without the support of the community we would be toast… like gone! When we originally opened Snack Attack we knew we wanted to create community but we didn’t realize HOW important it really was to having a sustainable brand. We quickly learned we had to implement our community initiatives to get people in the door, especially up here in Fort Collins. We started hosting all the fun community events like Bend & Brew Yoga, group runs, beer and donut pairings, painting nights, etc. Not being able to connect with our community like we used is tough, but it also motivates us to keep going. Those events will come back post- Covid, hopefully sooner than later! 

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
My main business is Snack Attack Specialty Sandwiches & Brews located in Fort Collins which I own with my husband Shawn Storeby! We are a local, independent, family and veteran owned business. Our sandwich bar specializes in hand crafted sandwiches, salads and wraps with a wide selection of local craft brews! Our menu items are prepared with fresh and quality ingredients and full of flavor! We have fun with food! Ask to “Snack Attack” any sandwich or wrap and we’ll put crushed potato chips in your item! We call it the crunch factor! Sans Covid we have a fun and welcoming environment where we invite all ages to come and enjoy a great meal with great company! Plus we are really big on community so you’ll most likely leave with a new friend. Snack Attack opened in the summer of 2017 and man has it been a wild ride! I’d be lying if I said it was easy ha! Lots of highs and lows, but overall a LOT of fun! It takes a special type of person to love the restaurant life! My husband and I are a great team and we’ve overcome a lot of challenges. It’s all about staying strong, being creating and always pushing forward. We’ve learned you HAVE to DO THE WORK. Don’t assume that customers just come flocking to you. It’s important to be a part of your community because when you need the help your community will be there for you! Snack Attack is a place where you can come and leave your worries behind. We always say check your baggage at the door… our wall on the left reads “Good Vibes Only” and we truly try and foster a positive environment not only for our guests but our staff as well. It’s about the whole experience- great food, great beer and great company. We want you to leave with a full belly and a smile on your face!

I also recently launched the Online Restaurant Academy with good friend and female restaurantuer Tiffany Helton from Stuft Burger Bar and Lonesome Buck! With over 20+ years of restaurant experience we have created an 8 week online coaching course to help restaurant owners improve their bottom line. We teach topics such as P&L review, Covid survival tips, mindset, how to manage your team, how to create effective and efficient processes, customer retention, marketing strategies and adding additional revenue streams! Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Fort Collins has SO many fun things to do! When we have friends come to visit we give them a little FOCO favs tour! Lets assume its during the summer as there are so many fun activities! We would of course start out their trip with a stop at Snack Attack! Best sandwiches in town for sure! Then we would most likely take them to one of our favorite breweries like Maxline, Odell, or Horse and Dragon. We would visit the Exchange for some donuts from FoCo DoCo and a marg from Vatos while we let the kids run around! Another fun adventure would be up to Horsetooth Reservoir where we would get out on some paddle boards and head out to the coves. If we had enough time we would rent a pontoon boat and spend the day on the water. Hiking and biking are another two fun things we try and do! A hike up at Horsetooth or back at Lory State Park would for sure be on the agenda with Snack Attack Sandwiches to enjoy at the top of our hike! Some other great restaurants we would take them to would be Stuft Burger Bar, The Taco Stop and The Union. For more fun adult only stops would be The Sunset Lounge or Social. It’s always fun to head into Old Town Square to hang at the splash pad and pick up a coffee from The Little Bird Bake Shop.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I’m dedicating my shoutout to my amazing husband Shawn Storeby! Our sandwich bar was actually HIS idea and he’s always pushed me to not give up. He’s one of the hardest working humans I’ve ever met and he’s always picked me up when I felt like I couldn’t do it anymore. Plus he’s always supported me in my other endeavors. I’m always up to something new and even when it’s a super crazy idea I know he has my back.
