We had the good fortune of connecting with Lizeth Lopez and we’ve shared our conversation below.
Hi Lizeth, can you share a quote or affirmation with us?
One quote that always stands out to me is “el que persevera alcanza sus metas” which roughly translates to “he who keeps on persevering will reach their goals”. For me it means that we should never give up when it come to fulfilling our dreams. We have to work hard and never stop until we achieve it. It is something so beautiful to have the strength within and not never let anyone or anything get in your way of achieving that dream. This quote will always leave me in awe knowing that if you have that certain passion and determination inside it can take you to achieve big things.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
What I would say that what sets me apart from others is definitely my determination and the strength I have to get ahead in this country. The most exciting thing is to finally be able to see my dream come true. That dream I’ve had since I was young and now seeing my customers enter the creperie fills me with pride, satisfaction and just so much joy. One of the reasons I have gotten to where I am now would be because of my family who were there in every moment supporting me. There were days where had to work everyday some days until 2 in the morning at the restaurant, as well as having to go through the lengthy process of having to get all the permits and licenses that are needed to be able to open the restaurant. It was not easy at all since there are so many steps to follow, as well as the many requirements that the state and the city ask of you. I had to take business classes in English which was a little difficult since it is my second language, pass health exams that are mandatory if the business is about food. The main takeaway that I would say I have learned from all this is that it is a long and difficult process where you are bound to have moments in which you will want to throw it all away and you will want to give up, but in moments like that you have to think if God gave you that dream it is because he knows that you can achieve it and get ahead.
My wisest advice is to never give up on your dreams and goals, and to never stay with that desire of wanting to create your dream that you carry inside into a reality. I can genuinely say from the bottom of my heart that it is so very nice to be able to dream big and achieve big things. It might take you a little while or maybe years but in the end the satisfaction is enormous.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I would definitely take them to Chez Lizeth to get some breakfast. After that it would definitely be up the mountains to the Glenwood Springs hot springs specifically to the amusement park and well to the hot springs. Another place we like to take friends who come visit is Boulder. It has many different options for tourists but also their hikes are just amazing. The restaurant we like the most for dinner and or lunch at the moment would be Cencalli Taqueria located in downtown Littleton. It is definitely the home of the best margaritas and the owner Zoemi Romero is always there to give you the best service and make you feel welcome!
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Definitely to my husband, Aaron Acosta is the most hardworking and responsible people I know. He came from Mexico at the age of 20, without knowing the language and without knowing this country and still put his all into his work. He had worked hard for 20 years until he was able to gain enough experience and knowledge to be able open his own construction company. Through all of his hard work he is now able to give employment to others as well as become a roll model to his own family and others. Having that kind of example by my side for the past 25 years inspired me to open my own restaurant.
