We had the good fortune of connecting with Luciano Bonci and we’ve shared our conversation below.

Hi Luciano, what do you attribute your success to?
Firstly my wife has been instrumental in the creation and success of our business to date. I have been lucky to bring the skills in the kitchen, however my wife has brought the foundation to the business and supported me way beyond what I could have imagined.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
My journey as a chef has been a rollercoaster to say the least. As a chef who always wanted to learn and move quickly between kitchens in the early years of my career, this was to gain the skills the specific chef had and then move onto my other favourite chef and so on. Having said this, my goal was always to end up creating my own style of food through the skills acquired via great chef mentors. To achieve all I have achieved in my career has been a very rewarding journey but at a huge cost also. It’s been and continues to be a lifestyle (my now wife is making me slow down – love you Skooch).

The main challenges in my career came in no particular order:

Alcohol abuse – which I overcome
Loss of relationships due to the commitment need to succeed in my career
Physical wear – long hard days on your feet standing takes its tole
140 hour week was normal – running on 4 hours in bed 6 days a week – 8 months at sea working 7 days a week for the full contract also
I believe my generation if chefs in the UK have some trauma – we were the special forces of the kitchens – we literally have the scars to show it

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I’ll flip it ….

I live in Denver and claim Denver now for life ….

However Im from the UK ..

Newcastle United Fc is the football club of the city of my birth in the UK. Football as we call it is like a tribal religion back in the UK…the owners of the clubs are merely custodians, however the club stays and the fans stay also, owners come and go, fans stay for generations.

The heart of city sits the stadium, St James Park Newcastle upon – Tyne, the home of NUFC, this club is amazing and has such history. It’s the heartbeat of the city. ( I used to break into the game as a kid by hiding in the toilets until the turnstiles started going).

even if your not a ” soccer ” fan, id put money the game experience in stadium would turn the hardest critic of the game experience live.

Who else deserves some credit and recognition?
Chef ” Pikey” and David Thompson from Restaurant About Thyme London. Those two guys were great mentors in the kitchen and really found my skill in pastry and pushed it in the best way. I will never forget out nights out also Pikey my Boy. – Also I have to make an honourable mention to all the culinary arts education team at Newcastle college – my Wife as always.
