We had the good fortune of connecting with Megan Silvertooth and we’ve shared our conversation below.

Hi Megan, what was your thought process behind starting your own business?
Having both owned our own businesses in Denver we knew eventually we wanted to do the same in Grand Junction. Our friend Ben Parsons, owner of The Ordinary Fellow Winery, approached us to be the food source at his winery in Palisade. Wanting to serve seasonal high end food to pair with his wines seemed like the perfect opportunity to get started!

Alright, so let’s move onto what keeps you busy professionally?
Michael and I moved to the Western Slope to have access to the amazing produce grown out here. We really wanted to get to know the farmers and their products so we could incorporate it into our menu at peak freshness. When Michael was a Chef in Denver he often couldn’t get access to many items being grown on the Western Slope. Having the ability to drive down the road to a farm to shop and get inspiration for creating new menu items is one of the main reasons we are out here.

We opened Le Snack on the patio of The Ordinary Fellow Winery wanting to act as their restaurant. We invited guests to sit down and share multiple courses that paired with the wines being made there. Unfortunately, the seasonality of Palisade hindered the ability to expand and serve more of the higher end menus that we envisioned when we opened. Having hosted many private dinners and special events, we decided to become a catering company so that we could focus on service, beverage pairings and creating unique menus more consistently.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
We would start by taking guests to our favorite farm stores/bakeries in town as we love cooking for our friends! We love Field To Fork, Blaines Farm Store and Okagawa for produce. Kulina Lani for the best bread and pastries and Sweet Kiwi for dessert!

One day would be spent Fruita hitting the mountain bike trails at 18rd and then heading into town for beers at CopperClub.

Another day would be spent in Palisade hiking The Rim Trail or Mount Garfield and then visiting a few wineries.
