We had the good fortune of connecting with Nicole Waters and we’ve shared our conversation below.
Hi Nicole, have there been any changes in how you think about work-life balance?
As Bites With Coco has grown over time, it has been more difficult to find time outside of my 9-5 to focus on getting content and showcasing new businesses. I think finding the balance between a demanding, full time career and your hobby outside of that is a very common struggle.
In the last two years, I have found *somewhat* of a balance that works for me so that I can make sure I am able to put my best effort into Bites With Coco – this involves planning out content about a month in advance, going out during the week after work when possible, and really maximizing weekends. I’m also someone that needs downtime to recharge, so the calendar can get crazy really fast! I always make sure to leave some room for those days when I want to go camping with my partner, do non-food related actives, or just stay inside my cozy apartment all day.

Let’s talk shop? Tell us more about your career, what can you share with our community?
A couple of lessons that I’ve learned along the way is that you should strive to be 100% authentic in your posts (AKA don’t be afraid to show your personality! It might be scary to open up at first, but it will go a long way) and be sure to have FUN when making content! It’s never that serious and shouldn’t be stressful. Just be you, be genuine, and share what you love with your followers.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If my best friend was in town, I would first want to take them to Oakwell Beer Spa for a relaxing morning to recharge, then head over to Rino to visit Three Arrows Gallery to support some local small vendors. After that, we would grab a bite at Barcelona Wine Bar and then head over to Ratio Beerworks for a nightcap! Ratio also has free comedy on Wednesdays and Drag Bingo on Thursdays, so ideally we would catch one of these events.
Other options at the top of my list would be: Sports game (Avs or Rockies), Nola Jane Restaurant & Bar, Jax Fish House & Oyster Bar, Ace Eat Serve, City Park Farmers Market, Larimer Square, DMA, Common Threads, Art District on Santa Fe, Welton Room, Room for Milly, the list goes on.. So many great spots around town!

Who else deserves some credit and recognition?
I would like to recognize my fiancé, Josh, for helping out with Bites With Coco since day 1! Josh came up with the name for my page and my initial logo that I now use in my email signatures. He is always by my side to help capture content for those times you need an extra pair of hands or concept ideas. He is the best!
