We had the good fortune of connecting with Torrie Giraldo and we’ve shared our conversation below.

Hi Torrie, what do you attribute your success to?
I’ve always loved to be in the kitchen. When I met my husband a few years back he suggested that I share my recipes on social media. I’ve been creating and sharing ever since!

Let’s talk shop? Tell us more about your career, what can you share with our community?
I have always had a passion for cooking and baking but haven’t always been vegan. I have been vegan for over five years now. In the beginning I had no idea what I was doing and there also weren’t many vegan brands like there are today. Fast forward to today I’m comfortable in the kitchen being vegan and like to create recipes from scratch. Nothing comes easy and I’m still learning every day.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Colorado Springs has so much to offer! I’ve only been here a short time but so far I love it. There’s tons of outdoor activities for everyone. I would definitely recommend driving up pikes peak and visiting Garden of the gods park. The views here are truly breathtaking. One of our favorite spots to eat is Monse’s Pupuseria in Old Colorado city where you can get vegan chilaquiles and a dairy free horchata. If you’re looking for diner food you have to check out a new all vegan diner called Fern’s. They have breakfast and lunch options and everything is delicious!

Who else deserves some credit and recognition?
I definitely wouldn’t be here if it weren’t for my amazing supportive husband. He’s always cheering me on with everything I want to do in life!
