We had the good fortune of connecting with David Collector and we’ve shared our conversation below.
Hi David, how has your perspective on work-life balance evolved over time?
Learning to navigate the constantly evolving work life balance has been a unique experience. When you are passionate about what you do professionally, it becomes easy to prioritize work. In the beginning stages of opening Stick Around, it took every ounce of energy and focus to bring my vision to life. Shortly after the food truck opened, my wife and I welcomed our daughter, and it created a shift in what we considered a healthy work life balance to be. Navigating our new normal has been a blessing in disguise, work is still my passion, but I no longer focus on that as the only thing to strive towards.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I have been cooking since i was old enough to work, learning and growing in every opportunity i could. we are different from other businesses because of the style of cuisine we produce. everything we do has a focus on street food and bringing awareness to all the wonderful cultures around the globe. Nothing about starting a business is easy and opening in the midst of the pandemic brought on its own challenges. we are incredibly excited to keep growing and bringing Stick Around to every mouth we can. We have adapted at every struggle along the way and grown into the business we are today because of it.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I would take them to all of my favorite local spots. We would grab drinks from Asher Brewing Company and Romero’s K9 Club and then make sure to eat from our go to food trucks including Los Dos Bros, Temaki Tornado, Tostadas and It’s All Greek To Me. For restaurants we’d make reservations at Japango and Oak. Aside from eating/drinking, we’d go up to Rocky Mountain National Park and enjoy some fresh air and sightseeing.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Anothny Bourdain deserves credit where credit is due. Hes words and inspiration not only helped millions of others but myself included. May the late Bourdain rest knowing how many people he inspired and pushed forward in a industry that can tear so many down. Also to all of our friends who have helped us grow into the business we are today, we couldn’t of done it without the support and insight from the people closest to us. And most importantly our wonderful community that continues to show support by letting us take care of their lunch and dinner. we wouldn’t be where we are without the continued support and feed back we have received,
