Meet Jessalyn Osorio | Home Baker & Culinary Student


We had the good fortune of connecting with Jessalyn Osorio and we’ve shared our conversation below.
Hi Jessalyn, we’d love to hear more about how you thought about starting your own business?
When I got out of the military, I felt that nothing I did really made me happy. So I went back to the basics, baking and cooking. I had been in the kitchen pretty much all my life. My mom had a cake business when I was growing up and she would let me help her make the cakes and make decorations. I also was a Culinary Specialist in the military and worked at the Culinary Arts building on Fort Carson making cakes for units. My dad has been in the food industry for years and graduated from culinary school a couple of years ago. He is now a chef with his own business and he inspired me and made me realize it’s not too late to do anything in life. I was actually working on my bachelor’s degree in Social Work and from one day to the next, I enrolled in culinary school. I wanted to wait to start my business until I had my degree but realized that I just needed to do it. So I asked my mom to help me come up with a name and it took a couple of weeks of going back and forth but then one day she asked me what I thought about “La Noche Bakery.” She told me she had been praying about finding a name that was original and having a name that no one else had and it just popped into her head. I loved the name right away! I am from Texas and we speak Spanglish there so having a name that had both Spanish and English just felt like the perfect nod to where I am from. La Noche means “The Night” and being a stay-at-home mom, wife, and full-time student, I can really only bake at night so it was the perfect name.


Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
I am really excited about my business growing here in the Springs. While I serve traditional desserts like cakes, cupcakes, macarons and cookies, I also strive to sell Hispanic desserts or desserts featuring Hispanic flavors. I feel like we are underrepresented here in the Springs, so being able to get some of that flavor out there really excites me. Once I am done with school, I would like to open a store front or dessert truck and be able expand my business!


Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Some of my favorite spots to visit in Colorado Springs are Garden of the Gods, Seven Falls and walking around downtown or in Old Colorado City. Some great food places in COS are Monse’s Pupuseria, they have great food and a nice outdoor atmosphere. When you are done there it is nice to take a walk to La Baguette to get some tasty desserts! Mici Handcrafted Italian is great for Pizza and they have gelato! It is a great family friendly place I take people to all the time! New Day Cafe is an amazing brunch place, I always have a great experience there and the food is amazing!

Who else deserves some credit and recognition?
I strongly believe that God has played a big part of where I am now at with my business. Baking is something I love but I never wanted to start a business. I feel like it was something I fought with myself about for a long time but I was constantly being reminded of how my baking and food was a gift to those around me. Also a big thanks to my parents for always inspiring me to do more and to my husband, Christian and my kids, Sebastian and Layla for always supporting me.
