Meet Anaid Rodriguez | Daughter of owners

We had the good fortune of connecting with Anaid Rodriguez and we’ve shared our conversation below.
Hi Anaid, every day, we know how much execution matters, but we think ideas matter as well. How did you come up with the idea for your business?
When our family started this business, we noticed that most taco trucks offered the same familiar flavors. It was difficult to find Mexican food that truly reflected the flavors and traditions of our hometown, Mexico City. As we cooked for family, friends, and our local community, we realized that even many fellow Mexicans weren’t familiar with some of the unique dishes from Mexico City’s vibrant culinary scene. With Arturo Rodriguez—our head chef and owner—bringing over 30 years of restaurant experience from working with various establishments in the Boulder area, it felt natural to take this next step. Introducing our community to authentic Mexico City cuisine became our mission, and managing the business behind the scenes was second nature. Our goal has always been simple: to share high-quality, authentic flavors that connect people to the heart of our culture.

What should our readers know about your business?
My parents Arturo and Pilar own a Mexico city inspired food truck located in the Boulder County area (specifically Lafayette) .
My parents are immigrants from Mexico city, they immigrated in the late 90s and made Boulder County their home. My dad Arturo worked in the restaurant business for years, usually holding down 2 jobs to make ends meet. He worked in Italian restaurants, American grills, Mexican fusion, barbecue joints, you name it. Out of this he learned amazing culinary skills. Eventhough we grew up around my dad’s amazing culinary skills we always preferred my mother’s cooking at home. Growing up as little chilangos in Boulder County we realized the lack of selection in food we craved and were used to. Therfore my mom would spoil us with pambazos, quesadillas fritas, huaraches, and on the special occasion we would get barbacoa de borrego with consome (my mouth waters as I write). The whole family would come over and we would gather and indulge in my mom’s cooking.
My parent’s love language is food, they’ll feed you until your heart and stomach is full. Growing up our house was always full with friends and family indulging in their cooking.
Eventually friends and family would ask my parents too cook for their events and smalls gatherings and my parents would do it out love and not charge. Everyone always asked why they didn’t open a food business because everything was so delicious, but it was always a dream that seemed out of reach.
Towards the end of 2023 I quit a very toxic job and tried to encourage my dad to start a catering business on the weekends. Around the same time he was working for a company that unfortunately let him go due the decreased labor. This was very hard for the family and given the circumstances my parents poured all their savings to start their food business.
No one tells you how hard and how much goes into getting a food truck and up and running. It’s definitely not easy, but with my food safety and regulatory background and my parents culinary experience the adventure began.
My dad and I started in a little corner on 119th and Arapahoe in Lafayette. We were doing but we eventually got kicked out. Finding a location was the hardest at the beginning. We were eager to get people to gives us a try and taste our food but we wouldn’t were to park.
Through the Latino Chamber of Boulder County we have made friends and found Maria from Romero’s K9 Club where we are posted most Thursdays, Fridays, and Sundays. We’ve met beautiful people who have lended us a hands though out our journey.
I would consider us still new to the food truck business and we still have so much to learn but we are here to bring a little piece of our beautiful CDMX to the Boulder County for everyone to try.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Our itinerary would include a visit our favorite thrifting places, such as the Mile High Flea Market and the Lafayette Flea Market. Since we grew up in Boulder, we’d have to stop at the World Famous Dark Horse for wings and burgers. Perhaps enjoy a stroll down Pearl Street and Boulder creek. We would enjoy a game of mini golf and hit the batting cages at Gateway Park. Take a scenic drive to Glenwood Springs to relax in the hot springs and, on our way back, stop by Cielo Oaxaca in Frisco for their delicious mole enchiladas and tlayudas. These simple pleasures should make for an unforgettable experience.
