We had the good fortune of connecting with Kelsey Deboard and we’ve shared our conversation below.

Hi Kelsey, we’d love to hear more about how you thought about starting your own business?
My husband and I want to be doing something that makes our kids proud. At the same time be showing them how important it is to work hard for what you want.

What should our readers know about your business?
Our restaurant is family owned and everything is made in house. We’ve worked hard to build our menu using the best ingredients we can get our hands on. We’ve also worked through a few crazy challenges. The newest being the rise in minimum wage in unincorporated Boulder County. Just like the last challenges we’re going to adjust and have faith the community we’ve built will continue to rally around us and support us. We’ve definitely built an amazing community so along side with our amazing support system we know it will all work out.
We love our little restaurant not just because of the great food we offer but the family atmosphere we’ve created.
It’s been hard work but also extremely rewarding. We just love what we’re doing!

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Niwot in its self is a stay-cation. Little shops to explore and great food. Starting the day there and then heading to mountains is a great way to show friends what Colorado has to offer. Depending on the season a trip to Denver or one of our amazing mountain towns will do the trick. Maybe a concert at Red Rocks or a quiet day at one of our hot springs. Can’t go wrong in Colorado really!

Our friends and family play a huge part in our success. They all help out in some manner and their support has been part of what keeps us going.
