We had the good fortune of connecting with Brett ‘Smitty’ Smith and we’ve shared our conversation below.
Hi Brett ‘Smitty’, what is the most important factor behind your success?
The most important factor behind the success of The Post Chicken & Beer is actually not our chicken or our beer. It’s our people and culture of hospitality.
Our Colorado-style fried chicken always comes with a warm side of Colorado-style hospitality. During the pandemic when dining-in was no longer an option, it became abundantly clear that figuring out how to provide the Post hospitality experience—even for guests ordering takeout or delivery—was more important than ever. We’ve been lucky through the pandemic in the sense that our gluten-free fried chicken is the perfect takeout food, but we still had to get innovative to be able to keep hospitality at the forefront of what we do.
That innovation came in a variety of ways. We hand-wrote special messages on every single takeout bag. We started in-house delivery to keep our own employees engaged and give them the chance to see some of their favorite regulars as they dropped off their food and beer. And now that dine-in is back, we continue to find ways to stay rooted in our communities and to provide the hospitality the Post is so known for.

What should our readers know about your business?
I am the chef and partner of The Post Chicken & Beer.
The Post fries up crispy, juicy Colorado-style fried chicken (which just happens to be gluten free) and pairs it with award-winning craft brews. When we founded The Post in 2014, we had no idea it would be such an incredible success. We now have locations in Lafayette, Longmont, Boulder, Denver’s Rosedale neighborhood, and Estes Park, with our Fort Collins location opening in October and a LoHi location coming soon.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
In Boulder, Bohemian Biergarten and The Attic. And have to give a shoutout to our friends at Jax Fish House & Oyster Bar, Centro Mexican Kitchen, and West End Tavern.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I want to give my shoutout to Dave Query, the founder of Big Red F Restaurant Group. He has built an incredible family of restaurants in Colorado and mentored so many people while still staying community minded. I am so appreciative to work with someone who’s so philanthropy oriented.
