We had the good fortune of connecting with Chef Corso and we’ve shared our conversation below.

Hi Chef, what was your thought process behind starting your own business?
I’m an avid hiker and camper. I’m from the pacific nw and I loved exploring the mountains and trails in the region. I’m also a classically trained chef and have been in the food industry for over 20 years. Food has always been a big part of my life. When I went out on my adventurers, I noticed that most folks were just boiling water and adding it to a bag. This added very little to the outdoor experience and I saw an opportunity to elevate outdoor meals for better enjoyment.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
People may not think about recipes as an art, but there is a lot of consideration that goes into a great meal or dish. For Outdoor Eats recipes, all are 10 ingredients or less, ready in 30 min or less. Mindful of pack weight and volume and require no dehydrating. They are thoughtful and crafted for best results on the trail. Color, texture, freshness and flavor are all factors in helping create a great meal. Besides recipes, I believe logos and branding are an important part of any experience. We work to have a fun and approachable brand that folks can get behind

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I don’t have a specific person in mind but each of my roles along my professional journey have guided my knowledge and understanding. From testing and developing new food products in a test kitchen as a research chef, to leading a culinary team and menu development for a 14 unit restaurant chain to training national and international teams for Starbucks. They all gave me a different perspective on food that has been extremely helpful in guiding my path
