Meet Gabby Emslie | Mother & Baker


We had the good fortune of connecting with Gabby Emslie and we’ve shared our conversation below.
Hi Gabby, what was your thought process behind starting your own business?
I started my business, Rosy’s Donuts, during a crazy time – earlier that year Covid shut down the schools, and I had to leave my job as a baker at a restaurant to homeschool my daughter through the end of kindergarten and all of 1st grade. Since I suddenly had no income and had to homeschool full time, I had to figure out how to make money from home. I’ve always loved baking and have been in the industry since I could first work, so naturally selling baked goods out of my home was the best option. There really were no good donut options in Salida, so I decided to learn how to make them. To survive, to pay rent, and to be able to stay home with my kiddo!

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Since starting a business is hard, especially during Covid, I wanted to make sure my business stood out and was easily accessible to everyone in a safe way. The idea of delivery donuts was easy – contactless ordering and payment online, contactless drop off right to your door! After the logistics were worked out, the delivery process was super easy and something that not many restaurants offer in town. It is something that sets us apart, and no matter where our business takes us in the future, delivery is something that will always be a part of Rosy’s Donuts.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I grew up in Salida, and as it has changed it has become even more fun with so many opportunities for adventure. The town is so full of creative and talented people that finding a cool spot is easy. Starting with breakfast, I would take them to Little Red Hen – their selection is amazing, tasty, and the coffee is good too! Amica’s is by far my favorite restaurant for lunch or dinner, with the best salads and pizzas (and atmosphere) in town. For a drink, Wood’s Distillery has innovative cocktails and top of the line spirits made by an amazing distiller, Beck Ceron.
Around town, I usually take people down F St. to window shop, ending at the river and the riverwalk by the park. Some of my other favorite spots are Sands Lake, Greens Creek Trail, and Shavano trail.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I feel there are so many people who deserve a shoutout and a huge thank you in regards to the success of my business! My family, Rosy and Beck, for supporting my idea and helping me get orders and events done, as well as pushing me when I need extra support. My parents, friends, and the community as a whole for supporting me, encouraging my idea, and buying donuts – I wouldn’t be successful without everyone as a whole!
