We had the good fortune of connecting with Gabriel Oliver-Kose and we’ve shared our conversation below.

Hi Gabriel, can you tell us about an impactful book you’ve read and why you liked it or what impact it had on you?
A key book in my life, one that has shaped not only my career, but the foods I eat and the hobbies I enjoy is The Art of Fermentation by Sandor Ellix Katz. This book, which is a guide to everything and anything fermented, really gave me the foundation and the idea to create OliKo Ginger Beer. It gave me the fundamental knowledge I used to create our line of Cultured Ginger Beers and it also taught me just how amazing and beneficial fermented foods are. 

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
OliKo is a one-of-a-kind, probiotic Ginger Beer that’s helping to reshape the beverage market through the use of thoughtful, functional ingredients and centuries old fermentation techniques. Our ginger beers are made with a probiotic ginger SCOBY, a community of gut-healthy bacteria and yeast. This tangy base is blended with fresh, organic ingredients to create our standout beverages. Whether your looking for a non-alcoholic sipper or an exceptional cocktail mixer, OliKo Ginger Beer has you covered. We’ve had a lot of great help from our community, both consumers and other like-minded business and we’ve learned to stick to our values and beliefs.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
First off, we would wine and dine our way down Pearl Street. Stop by Arcana for a tasty cocktail, enjoy some hot off the grill food at Oak and finish off our evening with a Saltamboca and Amaro at Pizzeria Locale. I’d take them backpacking at my favorite spot outside of Nederland. Sorry readers, the area is a family secret found by my father in the 1970’s. We’d enjoy the stunning beauty of the Colorado Rocky’s where I’m proud to have been born and raised. We’d finish the trip by attending a concert at Red Rocks Amphitheater. It’s legendary!

Who else deserves some credit and recognition?
First shoutout goes to my wife, Jennifer! She gave me the push to take the leap into the entrepreneurial unknown and is a source of motivation and inspiration to me daily. Also, a huge shoutout to my family for all their love and support and to my friends for trying countless variations of ginger beer over the years.
