We had the good fortune of connecting with Polina Astafyeva and we’ve shared our conversation below.

Hi Polina, we’d love to hear more about how you thought about starting your own business?

I have always loved baking since I was a teenager, I baked for family, but never thought I can make a real business out of it! When we moved to US from Kazakhstan in 2017 I once made a cake for my friend’s birthday and she was so impressed, she said I should sell cakes because they are very good! Of course, I had a lot of doubts, but she cheered me up so much!
I started to make cakes for friends and people I know little by little.

As said everything happens for a reason, a bit later I met a girl who loved baking as much as I do and she suggested us to start baking business together and this is how BiteIt! Bakery was born!

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?

I love BiteIt! Bakery with all my heart and always proud to tell more about it! As an immigrant when we just moved I noticed there are not a lot of good sweets and cakes here in US, cakes mostly are very very sweet or fatty and give you bad feeling in your stomach. So I decided I can make a difference and resolve this problem!

BiteIt! Bakery’s main mission is to make not only beautiful good looking cakes and desserts but also make them taste delicious, to make sweets you can enjoy eating and sweets that not give you heartburn or stomach ache!

Starting business is never easy and Best lesson I’ve learned from having a business is that everything is in your own hands and you can do anything! Don’t be afraid and go for it, because where is our main fear there is our strength!

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
My aunty just visited us from Kazakhstan so this question is easy for me!

I would go to an art museum, this one is my favorite and I’ve been there a lot of times and love visiting their special exhibitions! After that I would enjoy lunch/dinner at their restaurant. This place is delicious!

Next day I would attend a sport game at one of Colorado stadiums! I’m not a sporty person or fan and just recently opened this type of entertainment for myself when we attended Avalanche vs Toronto Maple Leafs hockey game with my mom and aunt and this was such an amazing experience! I loved the stadium food as well by the way! Haha!
I loved the atmosphere and energy and loved to watch people-real fans supporting their favorite team and chanting“Go Avalanche!” This was amazing and I’ll definitely be attending more games!

If there is no games I would go to a musical at the Buell theater or Candlelight Concert!

And rest of the days I’d of course spend in the mountains because we are in Colorado, right?

I would spend a day in Vail, enjoying day walking around or skiing or snowboarding if you do any of that. And I’d stop by Alpenrose for dinner!

And I would definitely check out hot springs! Iron mountain hot springs in Glenwood springs, for example!

Who else deserves some credit and recognition?
My husband is my main cheerleader! He always supports me and believes in me even when I’m on my lowest. He never doubts my success. He runs his business too and I learn a lot from him. He always has a good advice or cheering word for me!
