We had the good fortune of connecting with Ross Pullen and we’ve shared our conversation below.
Hi Ross, how does your business help the community?
Each month Jackbeque offers contributions to a local non-profit or direct support by donating a portion of sales when customers use a designated coupon code. I believe it’s important to select an organization that is transparent & actively involved with local efforts to improve our community.
Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Jackbeque BBQ was created to serve plant based food that anyone could enjoy. Everything is created with bold flavors that represent traditional BBQ dishes with a few exciting updates. Our Cuban sandwich uses smoked watermelon sliced like ham and pulled jackfruit instead of pork but they remain true to the textures & harmony of the original favorite.
The business was created to focus on flavorful all natural ingredients without processed meat substitutes to set us apart from other concepts. I keep the menu focused on a few handfuls of fantastic items that are always filling & hard to forget.
I never thought I could afford to risk starting my own restaurant but I kept thinking about how I could find the right situation to take the first step. I knew all of my experience & education would come in handy once I found a good opportunity to get started. One place I found had a landlord that wouldn’t allow any shared use. Eventually I figured out there must be some unused kitchen space in one of the nearby hotels & I found exactly what I wanted without the stress or delays that always seemed to be part of a new restaurant.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Denver, Colorado is a unique combination of city paradise with plenty of nearby outdoor adventures. I think we have a great variety of art, entertainment & activities anyone can enjoy. I’d highly recommend a night out on the town including the First Friday art walk on Santa Fe or a show at Red Rocks after a day of hiking, climbing, rafting, or skiing. We are also within a few hours of many relaxing hot springs to soak away any aches or pains from all the fun!
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I’d like to shoutout Somebody People for amazing vegan food on S. Broadway, to Kristina Sasser for her innovative glass art (ksassglass.com) & Smoknbra in Frisco, CO… the owner Stevie sells local glass & other products from local Colorado artists & also to The Hilton Inverness Hotel in Centennial that has made it possible for me to provide high quality vegan food by renting me one of their kitchen areas. It’s a fantastic space that is supporting my vision with room that is dedicated to my menu. This ensures no animal products or allergens are near my food.
