We had the good fortune of connecting with Sergio Gonzalez and we’ve shared our conversation below.
Hi Sergio, can you tell us about an impactful book you’ve read and why you liked it or what impact it had on you?
I read The Alchemist, which is a novel by Brazilian author Paulo Coelho when I was in my teens, that had a great impact on me because its a book that tells a story about a boy who travels the world seeking to find a treasure, a treasure that was right under his nose back home the hole time, but only by completing his journey with all the ups and downs he was able to discovered that. I related to that story immediately because I believe that life is this incredible journey that we all make to seek our very own treasure, which I believe is ultimately happiness, which of course it has its own form for everyone of us. In my case is the joy that I get when I get to share a delicious dish with as much people as I can.


Let’s talk shop? Tell us more about your career, what can you share with our community?
I first started working in the food/service industry over ten years ago. I never had a formal education towards culinary skills but I learned by real life experience through the years, gaining more and more experience, knowledge and skills as I worked for different establishments that offered different types of foods. Thanks to this journey I was able to learn how to prepare dishes from various types of cuisines like Middle Eastern, French, Korean, Mexican and even Sushi. I really love all types of foods and cuisines but French is my favorite above all, specially Crepes. Because crepes are such an endless sea of possibilities, even though most people believe that crepes are just desserts, but that is where I come in, its my personal mission to show to as much people as I can, how great and diverse crepes can be, using all the knowledge that I collected over the years I create unique crepe recipes that are made under the techniques and influences of different cuisines from all over the world, because each culture has some unique flavors that will turn something already great like crepes, into something else that is truly amazing. And that is what I believe makes our brand different from the others.


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
the city of Colorado Springs is one of the most beautiful cities in the world in my opinion, and it’s mostly because of the beautiful landmarks with in it, if I was to show this amazing city to a friend (which I had, many times) I would take them to explore the incredible Garden of the Gods, to hike the mighty Pikes Peak and when we get hungry I would take them to the 719 food truck fest which features about 15 to 20 food trucks at the time and is the home of some unique flavors like Man Cave meat company, Tepex, 719 Munchies, Cow Girl kettle corn and lemonade and many more.


The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I own everything that I have to my family, starting with my parents. Their advice has guided me through the years. To my beloved wife, who works with me side to side every day and night to make my dream a reality. To my kids for being the greatest helpers a businesses owner can ask for, they always help me on every way that they can. And last but not least, to my uncle Jose, who with out hesitation jumped into investing in my vision and became my business partner and great friend.
