We had the good fortune of connecting with Ti and Jo Stroup and we’ve shared our conversation below.
Hi Ti and Jo, can you walk us through the thought-process of starting your business?
We were born in Seattle and on a recent trip back we frequented many smaller coffee shops and local coffee drive thrus. When we returned home we knew others would enjoy a local coffee spot too and we were inspired to create a coffee trailer of our own in the neighborhood. We have always loved creating unique coffee and tea recipes so we decided to share our passion with our community and open our own mobile coffee trailer. We feel it is important to have something on the menu that everyone can enjoy and we strive to cater to customers who drink coffee as well as those who do not. We are half asian and half white so growing up we were exposed to many different flavors from both sides of our family. We have a hard time finding some of our favorite flavors when it comes to tea and coffee so we offer a variety of specialty Asian drinks that we feel are hard to come by in our neighborhood. We also love to travel and we draw inspiration from the new flavors that we get to experience while we are abroad.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Starting the summer of our freshman year of college we worked in the hospitality industry for 5 summers at multiple Colorado dude ranches. Guests would come from all over the U.S. and occasionally from other countries and stay with us for a week of horseback riding, rafting, shooting, fishing, camping, and working cattle. We often described being a wrangler as a “dream job” and it was hard to say goodbye when we decided to move on. We don’t work on dude ranches anymore but we still have horses that we ride in Fort Collins as well as a new job working with our friend Dani Alvarez and her adorable miniature donkeys at the Farm at Sparrow Hill. We work as handlers alongside her beverage burros at weddings and events where we greet and take pictures with guests as well as serve beer from the donkey’s pack saddle baskets. Working alongside Dani has been a huge inspiration to us and we are so grateful for her constant guidance and support. Working in both the hospitality and wedding industry have been an asset to starting our own business and we hope to continue using the skills we have learned as we continue to grow our own brand.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
We would recommend checking out Red Rocks Amphitheater or Lair o’ the Bear Park for a good hiking spot. If you come during the winter we love skiing at Keystone or Copper mountain and walking around town afterwards. If you are here during summer check out Steamboat Springs for their Rodeo and tubing or Grand Lake for a quiet mountain town. Indian Hot Springs in Idaho Springs is our favorite natural hot springs in the area and is only a short drive from Denver. Walking around downtown Denver is always a fun time, make sure to check out Larimer square and 16th street mall. We also love going to the 88 Drive in for a Drive-in movie during the summer. Some restaurants we would recommend would be Bua Tasty Thai, Bistro Vendome, Angelos Taverna, Cafe Jordano, and Cho Lon. Casa Bonita is always a fun time as well and a very unique Colorado experience! Little Man Ice cream is our go to ice cream spot in the summer, we love their salted Oreo flavor but you can’t go wrong with anything they serve! We also recommend the ghost tour at the Stanley hotel in Estes Park.
Who else deserves some credit and recognition?
Our aunts and uncles have always been a huge source of love and support for our business. They own Aim High Chiropractic in Denver and growing up it was always inspiring getting to visit their business and seeing their hard work and dedication in action. We feel very fortunate to have them as mentors and we want to thank them for helping make our dreams a reality. Their guidance and shared experience have been invaluable and we are lucky to have such amazing role models in our lives.
