Meet Georgina Mendez | Restaurant manager and Mom


We had the good fortune of connecting with Georgina Mendez and we’ve shared our conversation below.
Hi Georgina, we’d love to hear more about how you thought about starting your own business?
Well, being a single mom, the money was my issue.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I’ve been working in the restaurant industry for 12 years now, I was super afraid to do that, I wasn’t sure if I was going to be able to make it, you know, I didn’t really speak English at that time, but my passion for the industry made me do it. While I was working at this taco place, I got tired of the bottle salsas, I’m difficult to pleas when we talk about Mexican food or spicy salsas, so I started making my own salsa, then I gave it to my boss for him to try it and he loved it!! So he told me that I should put it out for sale, and that’s how everything started. Being a single mom of 2 boys, made the way very difficult! Struggling with money, time and problems with my divorce, was a challenge!! But one day, I’m sure God sent me an angel, my investor, he made what I tough impossible, POSSIBLE! We started working right before Covid hit so our project was on hold for a long time but I never lose hope. Today I can say, we made it!! Not only me! Thanks to him this is possible!!! I’m extremely grateful for him!


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I’ll definitely take him to union station first to have brunch, with the majesty of the location around, after that I’ll take him to the 16th street to walk and teach him about denver history. To eat?? Of course ADELITAS cocina and cantina or LA DOÑA!!! Best places ever!!! Including food and drinks!! Another place that I would take him would be LA DIABLA, their concept and food are unique. To drink?? Blue moon brewery, just because the place is amazing and the variety of beers is really good too!! Glenwood springs, royal gorge, estes park and Boulder are a must places to visit, why? Because of the scenery, Colorado is wonderful!!! And I would love to everyone to know it. Majority of my best friends are Mexicans so when they visit me these are the places where I usually take them, it all depends the time, the weather. Loveland, winter park, vail, Breckenridge and aspen are places to visit too but like I said it all depends the time.

Who else deserves some credit and recognition?
My parents, even that my dad is not here in this world anymore, his advice, his words, his love still living in me. My mom, she is such as a strong loving person that drives me through my life. My kids, they are my strength, every day when I look at their eyes, is like the full filled me with this power to keep going in life.
