We had the good fortune of connecting with Michel Polania Sanchez and we’ve shared our conversation below.

Hi Michel, is there something you can share with us that those outside of the industry might not be aware of?
We are in a very niche market. As far as I’m aware, we are the only brand that specializes in manufacturing and distributing artisan paletas (ice cream popsicles) in the state of Colorado. Our premium quality and service is what truly makes us stand out from our competitors. We focus on using creamy dairy that you can really savor, fresh fruit and imported pulps that stand out in every bite, as well as farmer owned Colorado sugar.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Chupacabra Paletas is committed to making premium ice cream popsicles otherwise known as paletas. The story goes back in history to a little town named Tocumbo in Michoacán, Mexico. Legend states that back in the 1940’s, families from this region were the pioneers of creating these frozen delicious treats. Our brand is focused on keeping this tradition alive by using similar ingredients and methods in our production process. This is what separates us from the others and what motivates us to keep pushing. We are proud to be carrying our product in over 100 locations and participating in many pop up events and festivals.

Consistency has been key in getting us to where we are today. Keeping up with quality control and excellent service with our customers has helped shape the brand into the right direction. Of course nothing worth having comes easy. I’ve managed to overcome all of the obstacles that come with entrepreneurship by accepting the fact that it is possible to succeed. Capitalism rewards those who can provide the most value to the marketplace.

The main thing I’ve learned is that what works for someone else might not work for you. I follow a lot of different business owners and entrepreneurs and while much of the content has been very helpful and inspiring; you have the be the captain of your own ship. The truth is you have to decide what is best for you at the end of the day and take the necessary steps to get to where you want to be.

I want people to see my brand and I as living examples that hard work, perseverance, and discipline can take you to greater heights if you can allow yourself to grow and learn. This is only the beginning and I look forward to see what the future holds.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Well, some of my go to restaurants in Denver include, Sunny’s in Sunnyside for the best buttermilk pancakes. Q House in City Park has amazing sweet and sour spareribs. Adelitas in Platt Park never fails with their cielo, mar, y tierra molcajete which is like a Mexican surf and turf. Guard and Grace is by far my favorite restaurant boasting a palatable menu combined with world class service. Odell Brewing Co. in Sloans Lake and The Source Hotel in Rino are great places to grab a drink or two. For the nightlife I like Milk Bar, MDE Lounge, and Beacon. Red Rocks, catching a Rockies game, and Mountian biking in evergreen would be on the list as well.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
We wouldn’t be a family business if it wasn’t for family right? I’d like to take this moment to shoutout everyone in my family that has supported this dream of mine and highlight key players in my success. Chupacabra Paletas is inspired by my father Jimmy and his ice cream company in Charlottesville, VA called “La Flor Michoacana’”. Our business model and recipes stem from his concept. My mother Darly joined our team back in 2022 and has been in charge of paleta production and making sure our quality is always on point. My brother Bryan has been distributing our product for a couple of years now, further expanding our reach in new markets. My aunt Jaidy has been there since day one; offering insight, support, and guidance to our company’s vision.
