Meet Menyhért Böröcz

We had the good fortune of connecting with Menyhért Böröcz and we’ve shared our conversation below.
Hi Menyhért, we’d love to hear more about how you thought about starting your own business?
When I first started La piadina, I felt like there wasn’t any true italian authentic street food in Colorado and I always missed piadinas since I ve moved to the United States in 2002, so once I completed my masters degree in business, and decided I should start making piadinas, and introduce them to Colorado.
The idea of a food truck was also appealing to me, being a part time musician, and I thought it would go hand in hand with being a freelance musician.
We ended up starting La piadina in July 2013, 12 years ago, and I am proud to say we are still the only true piadineria in Northern Colorado.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
It was definitely a challenging journey, with having to do most prep and running the food truck with just little help at first.
Then in 2019 we started a brick and mortar piadina shop in downtown Fort Collins, and 4 month later covid hit.
It was definitely a balancing act with keeping the doors opened, but we survived thanks to the loyal regulars and with the help of a great staff.
I recently just sold the restaurant portion to a very nice family who now runs that portion of our beloved piadineria. I am still running the food truck around Fort Collins and now have more time to focus on my new rock band, Menyuska. We just released a new Hungarian folk Rock fusion EP in September, entitled Népdalok, that is on Spotify, Apple Music and all streaming platforms, and it’s the collection of 5 medleys that include 16 Hungarian Folk melodies, with a special guest musician from Paris, Csaba Palotai on guitar featured on 2 tracks, and it is found in both the original Hungarian and my English translation version.
Recorded at the Blasting Room by Jason Livermore and with Tobias Bank on drums, Mason Rogers on bass and backups and me on guitars, dobro, vocals and harmonies.
To our joy, it’s been currently on rotation on the Colorado Sound at 105.5, and included on the Locals only playlist at Iheart Radio at 93.3.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
My favorite places here in Fort Collins are the Lyric, where I love to go for shows and movies, and they also have tons of events, open mike, Karaoke and art shows.
I also like going to Surfside, for local music and pizza.
There are also many authentic food options from around the world, like Mount Everest Café and Jaws sushi and great bakeries like the Bread Chic.

Who else deserves some credit and recognition?
Shout out to my childhood Italian friends that brain stormed about the idea of starting to make piadinas for the American audience, to my step father Maurizio and mother Dodo, who are both amazing cooks, and from whom I learned so much about cooking during my teenage years, before moving to Colorado from Tuscany.
Also a special thanks to the school of Business at CSU where I received my Masters in Business Management, which definitely gave me a push to start my own business.
