We had the good fortune of connecting with Amy Lawson and we’ve shared our conversation below.

Hi Amy, what was your thought process behind starting your own business?
I started my private practice, Thrive Nutrition RDN, after working in clinical nutrition and seeing just how much our daily habits and food choices impact long-term health. I knew I wanted to do more than treat illness—I wanted to help prevent it. So, I combined my passion for nutrition and love of cooking to create a practice focused on using food and nutrition counseling as a form of preventative medicine.
I also believe that cooking doesn’t have to be complicated to be nourishing. Part of my mission is to bring people back into the kitchen, teaching them how to make simple, satisfying meals at home that support their health and taste delicious, too!

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
At Thrive Nutrition RDN, I combine personalized nutrition counseling with practical meal planning and simple, delicious recipes on my website to help you feel confident cooking at home. What sets me apart is that I combine science-backed nutrition with practical cooking skills, so healthy eating becomes simple, satisfying, and actually doable. I don’t just tell you what to eat—I show you how to make it happen. No diets, no rigid plans—just real food, real-life strategies, and a better way to fuel your body.

I’m most proud of the relationships I’ve built with my clients and the “aha” moments when they feel confident in themselves or realize healthy eating doesn’t have to mean perfection.

Getting to where I am today wasn’t easy. As a military spouse, I’ve moved often and had to rebuild my business and life in new communities. This has also taught be so much about being flexible, being consistent and also being patient. I’m also a mom to 3 young boys so juggling a business and motherhood comes with its own unique set of challenges. Yet, these challenges have also taught me to stay true to my mission: helping people thrive, not just survive.

I want the world to know that at Thrive Nutrition RDN is all about real, nourishing food, and simplifying nutrition to help you eat well, be well, and thrive.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
For a weekend trip to CO Springs, I would say lots of hiking and delicious food! Start Saturday at the Black Forest Farmer’s market to grab coffee and breakfast along with fresh ingredients to cook for dinner. Then go for a hike to Helen Hunt Fall’s followed by a walk around Garden of the Gods. Pop by Josh and John’s for some delicious ice cream then head back to your Airbnb to cook up the delicious things you got at the farmer’s market. Enjoy dinner al fresco and soak up the beautiful Colorado night sky.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My husband is my biggest cheerleader. He literally tells everyone he knows, everyone we meet about my business, my YouTube channel and my cooking classes. I would not be able to run my business and be the best mom to our 3 boys without his love, support and encouragement.
