We had the good fortune of connecting with Caitlin Thomas and we’ve shared our conversation below.

Hi Caitlin, what is the most important factor behind your success?
The most important factor behind the success of Spumoni Creamery is FUN! Ice cream is meant to be enjoyed with people you love, in an atmosphere that you enjoy. That is why an ice cream food truck is so perfect. It allows me the opportunity to travel to different venues, and meet the public where the fun is happening – parks, breweries, festivals, private parties.

I believe that bringing positivity and embracing the fun side of things in life is underrated — much of our day to day life tends to be serious and it’s important to embrace the fun too! Let’s be honest, it’s also hard to have a bad day when you’re sharing fantastic ice cream with the people you love.

Let’s talk shop? Tell us more about your career, what can you share with our community?
Ice cream is a creative outlet for me. I love to create new flavors and try new recipes. Growing up, some of my fondest memories are of time spent in the kitchen with my mom and grandmother. Although I have no professional training, I have a passion and love for creating delicious ice cream. I have learned that always using high quality ingredients is key to creating delicious flavors. But when you sacrifice quality, you can taste the difference.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
We live in one of the most beautiful places ever so you have to get outside! When friends visit I always love to take them hiking — Indian Peaks Wilderness, Roosevelt National Forest, or Rocky Mountain National Park. You also cannot miss McIntosh Lake for kayaking or SUPing. Some of my favorite restaurants or food trucks include Rosalee’s Pizza, Biscuits at Mike’s, Summit Taco, and Gaijin Street Food. For the best beer in town, visit Left Hand. Their new Beer Garden is amazing!

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My husband has been an unbelievable support throughout this process. Starting your own business is no simple feat, and it takes a lot of time and hard work. But he has helped and supported me every step of the way. From helping me navigate difficult permit processes, to tackling bedtime for our son, to taste testing a million flavors of ice cream, I truly could not have started Spumoni Creamery without him!
