We had the good fortune of connecting with Cooper Watts and we’ve shared our conversation below.

Hi Cooper, we’d love to hear more about how you thought about starting your own business?
I had 10+ years in food service experience but had just graduated with an Economics degree from CSU-Pueblo and found working in finance completely unfulfilling. I found a food service trailer completely blank at an auction one weekend and my dream to create a unique life for myself was born.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
Puff Puffette Pass pass is a Hong Kong style bubble waffle paired with local craft ice cream made in Colorado and a kaleidoscope of fun and unique toppings, syrups, real whip cream (Grandmother’s recipe) and colorful sprinkles. Our signature Puffettes are inspired by my time in the cannabis industry as a dispensary manager and by pop culture throughout my life (born 1980). We celebrate the idea of the stoner chef serving munchies but in an experience that is safe and welcoming to the whole family. As hard working creatives we’d love to help break the stigma and often incorrect stereotype of the “lazy stoner”.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Pueblo has so much interesting and unique art I would start with a tour of Pueblo’s street art and art galleries followed up by dinner at Bistoro in downtown Pueblo and a visit to The Sacred Bean Coffee bus for an after meal latte. If it was a weekend I’d include a trip to the Arkansas River trail for some hiking/fishing/kayaking etc. then a quick trip into the wet mountains just west of Pueblo. Of course a stay at one of our local B&Bs or hotels.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My particular business model is inspired by so many people and places that it’s hard to narrow it down but I’d love to give a shot out to a trusted vendor that’s been working with me from the beginning and that’s Sweet Action Ice Cream on Broadway in Denver.
