We had the good fortune of connecting with Erin Walker and we’ve shared our conversation below.

Hi Erin, do you have a favorite quote or affirmation?
With starting this business I really leaned into a couple of phrases / quotes that have struck a nerve with me in the past. The first is, “Celebrate Everything”. Big wins, little wins, everything. I think that people especially need this now, after the crazy year that we’ve had. We haven’t been able to celebrate in the same way that we have historically, so my intention with this business is to help encourage people celebrate in a creative way. Another quote that resonates with me, is “Feel the fear, and do it anyway.” The truth is, nobody knows what they’re doing. We’re all just trying to do our best with what we have. It is incredibly daunting to consider starting a business — amidst a pandemic, no less— and going out on your own to try something new. The reality is, when you pour your heart and soul into something that you’re passionate about, that venture will bear fruit and it’s incredibly rewarding. Whether that fruit is financial gain/profit, relationship centric, feeding the creative part of you, a learning experience, or exposure.. in any case you’re going to get something valuable out of it.

Alright, so let’s move onto what keeps you busy professionally?
Well, I originally hale from the Midwest & currently reside in gorgeous Colorado. I opened “That’s My Jam Charcuterie Boards” amidst a pandemic in early September of 2020. I also work full-time in the tech world – sales, specifically – and was really craving a creative outlet. It’s definitely been an adjustment, but I would not trade it for the world. This venture has taught me to be agile, patient, and tenacious, while giving me an opportunity cultivate and master my craft. It’s taught me to be exceptionally organized, to stand up for myself, set boundaries, and never turn down a meeting! Everyone you meet has something to offer and a story worth hearing. I’m passionate about quality product, exceptional service and attention to detail. That, combined with a love for gathering and community, keeps this business running! I am drawn to color and texture in all forms. Interior design, floral design, art, food, you name it. On every board from That’s My Jam Charcuterie Boards, you will find something unique, fresh botanicals and a touch of whimsy.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?

(Oh this is an awesome question!) I’ve spent a lot of time in Olde Town Arvada, on Tennyson Street and in the Highlands over the past few years! If you are in Olde Town Arvada in the summer, grab yourself a cuppa coffee & breakfast from Hunter Bay, and walk around the adorable Main Street to peruse the cute boutiques. Then, grab a whiskey cocktail at The Bluegrass.
If you are on Tennyson Street, make sure to go to Parisi and order the “pizza salad”. It will change your life. There are great breweries and shops – along with some amazing murals and artwork!
Heading further into the city is the Highlands – I love a good patio brew in the summer time. Linger has some great, unique and delish cocktails!
Postino is another favorite of mine – excellent wine menu and fab bruschetta boards.
RiNo has become a great place to roam around an explore – the coolest artwork, fabulous food, and a super cool central market to explore!
S. Broadway has some unbelievable thrift shops, record stores and coffee shops. The Hornet’s blackberry lemonade is to die for!
As for activities – there’s nothing better than snagging some grub for a picnic in the park (hint hint – we do picnic boxes!) and people watching, which is always a great time.
Heading in to Denver Botanic Gardens and seeing all those gorgeous blooms is another favorite of mine. Rent some bikes and cruise around, play frisbee/volleyball.. you’re going to have a great time in Denver!
