We had the good fortune of connecting with Greg Salinas and we’ve shared our conversation below.

Hi Greg, can you share a quote or affirmation with us?

I listened to the book “Man’s Search For Meaning” one day before I was laid off of a job that I had for over 22 years. It helped me keep a positive attitude in figuring out what I would do in response.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
After being let go of my job that I had for over 22 years, due to not being able to travel because of COVID, I started exploring non-profit and good will ideas. I was directed by my friend Frank Young to reach out to the founder of a nonprofit called Jesus on Colfax. During my first visit with Shawn Sikkema, we got into a conversation about feeding folks in the community that deal with food insecurity. That conversation started this BBQ journey I have been on since late 2020. The plan has shifted a few times and while I continue to figure things out, I have found a nice spot in catering for all kinds of events. I started out with a smoker on a small trailer but soon invested in a 1,000-gallon smoker that I have named “Grace”. I cook Texas Style BBQ. It is a combination of dry-rubbed meat being cooked by wood fire. I have been smoking meat for a very long time, but when I decided to start selling it, I invested some time studying the best in the game and improved my cooking technique. The biggest change I made was to how I managed the fire. I used to think the heavier the smoke the better, now I like to run a flaming fire that produces transparent clean smoke. Running a clean fire creates such a unique flavor profile, it is hard to duplicate on any other kind of smoker. I take pride in the food that I prepare and deliver, I feel comfortable in telling customers that this will be some of the best BBQ you have ever eaten.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I have had many good friends come visit us here in Colorado. The visits always include some good eats around town. I like to take friends to the Denver Bisquit Co. in the Stanely Marketplace. It normally includes a return trip to visit the Stanely Beer Hall to pour our own beers. One of my other favorite spots is The View. It is always great to take visiting friends on clear days to show them the incredible views from the balcony. We also like to show our friends part of downtown by going to the 16th Stret Mall to visit the shops and restaurants in that area. If timing is right we may visit the Stock Show and Rodeo or even catch a Rockies game.
