We had the good fortune of connecting with Jennifer Peters and we’ve shared our conversation below.
Hi Jennifer, what role has risk played in your life or career?
Everything that I’ve done has been about risk taking – from moving States for a job, moving overseas, jumping into MBA school, backpacking alone around the world and finally…taking the leap to start my own business with no experience! I’m not sure that I’ve thought about each item as a risk itself – it’s all been part of seeking a more fulfilling life and in order to do that, you have to take certain steps that are more like leaps!
What should our readers know about your business?
In the current time with COVID, I’d have to say that we have been set a part from the sheer resilience my core team and I have had. What has been really powerful for me during this period is that COVID has enabled us to really come into our own with providing nourishing food that keeps people WELL during a time where sickness is being managed and highlighted. We have really leaned into our vision of being beyond a restaurant, and more as a wellness company, which is our purpose and bigger mission. Our hope is to illustrate to people that boosting immunity what we eat & our lifestyle choices sets us up for a more fruitful and WELL life and we have been really proud to nourish our community so well during a healthcare crisis.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Well, obviously they need to have a breakfast, lunch AND dinner at Just BE Kitchen! 😉 But other favorite places would be to head to American Elm for dinner which I love, and I’d also take them to Safta for some great views and awesome Middle Eastern food. They would definitely be taken to Golden to see a cute mountain town and do a fun hike, having a beer at Holidaily (Gluten Free brewery!) as well. I’d DEFINITELY take them to Boulder for a hike on Mt Sanitas, then over to Chautauqua Dining Hall for brunch and another hike at Chautauqua too! Gotta see those mountains!
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
There are so many along the journey! From my first boss Todd to a mentor Brad Blum (former CEO of Burger King) to Kellogg my MBA school to mentors along the way and friends on a daily basis. Honestly, no one can do their journey without the support, help and love of others. Even if they are in your existence for short period. It’s often those small things like friends who helped paint chairs and tables before we opened, to friends who let me crash at their place to save on rent and everything in between – it ALL adds up cumulatively and never forget that. Everyone along your journey supports you, even if only for a fleeting moment.
