We had the good fortune of connecting with Justin Brunson and we’ve shared our conversation below.
Hi Justin, we’d love to hear more about how you thought about starting your own business?
Denver used to be a food Manufacturing city, I thought you seemed to be a huge hole in the food system not to have locally made natural meats. the stockyards here off of I 70 used to be the third largest in the United States which are completely gone now. Denver used to be a hub of food manufacturing for the Rocky Mountain area which has slowly died off in the last 50 years, It’s sad to see! I wanted to create local high quality meat businesses that uses properly raised animals to make great meat products.
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
River Bear American Meats is a small Natural meat company in Denver Colorado that focuses on using properly raised animals And old world techniques to make deli meats, sausages, bacon, fresh meat and Italian style salamis.I think one of the things I’m most proud of is the quality of animals we use for a lot of other meat companies in Denver but nobody using the quality of animals that we are. We even started our own herd of local beef Which we sell in our butcher shop and make our products with. Building a USDA Inspected meat manufacturing plant was quite a challenge but a challenge we were up for as a team. Also going through a giant pandemic during the start up year of a business was probably the hardest thing I’ve ever professionally been through..I would like people to know that River Bear American Meats we use only the highest quality animals in old World techniques to make some of the most delicious meat made in the United States
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I think we would start off in the Rino neighborhood and walk around and see all the beautiful crush artwork.Probably hit up Owl Bear for some barbecue or cart driver for some oysters and pizza.
From there maybe stop by the falling rock taphouse and have some afternoon beers.
For dinner I would head over to the fifth string which is my favorite restaurant in Denver right now..
We would definitely wake up and go get some dim sum at star kitchen.
May be after to dim sum go take a walk at red rocks if there is not a concert to go to.
Other restaurants I’d love to take people to our Merchentile,Cholon, pho 95 , blue Pan Pizza, Hop and pie and Oak

I want to give a shout out to my team At River Bear we couldn’t do what we do without their hard work and Dedication. Also to my partners for believing in my idea of doing something good for the food system here in Denver.
